  • Induction Legal Cookie

    I got this idea combining flax meal crackers with flax meal cereal.

    2 T flax meal
    1 packet Spenda
    1/8 t cinnamin (sp)
    1 T butter
    2 T water
    mix dry ingredients, add butter and microwave 30 secs. Add water, stir and place on a peice of parchment paper. Spread thin with an offset spatula or a spoon. Microwave on high for 2 1/2 to 4 min. till crisp. Let cool. You can also break this up and mix with cream.

    Don't forget to count the carbs. 1 for flax and 1 for Splenda.

    Since I had a few ( carbs left over and it's my second day of induction I was looking for something to munch on tonight. I wanted something not too sweet and this "cookie" sounded intriguing, besides I could use the flax meal. Well I cooked one up and it was wonderful!! I added a little whipped cream on top. I got to thinking this would make a great pie crust - light and crispy! Do these store well. I was thinking of making some up and having them as "toast" with my eggs in the morning?

            I tried this tonight. It was SO good! WOW! Right amount of sweetness and the cinnamon made it so EASY for me to forget that this was flax.

              The other day, inspired by the various flax seed cookie ideas, I made a Ginger Snap by substituting powdered ginger for cinnamon. For 2T of flax, instead of using 1T of butter, I use 1t of butter and 1t of heavy cream, adding just enough water to get the batter to spreading consistency. I nuke it for about 2 minutes.

              Great with a cup of tea!

                No Nuking for me...

                HI.

                I do not have a microwave. Can you believe it? I live in Germany only for a couple more years and I don't want to buy one when I already own one. It just doens't work with 220v plugs.

                Anyway...can this cookie/pie crust recipe work in an oven? If so at what temp....anybody else try it this way?

                      What's the measuring equiv for a packet? I only have the puffed/baking kind of Splenda.

                        use whatever your bag tells you is 2 teaspons worth of sugar to makethe powder work like the packets.

                        NAVAJETSFIRE you can use a very mild cheese slice and sprinkle it with the cinnamon and splenda after you nuke it until all bubbley. let it cool and you got crunchy chip like cookie.

                          OMG!!!!!!!! These are SO GOOD (and I have yet to come to terms with flax)! This is by far my favourite LEGAL TREAT! I could eat these all day long. Seriously. Thank you so much.

                            Is flax seed the same as flax meal for this recipe? I'm still new to the whole flax thing, sorry. I have flax seed and was wondering if I could make these.

                              If you flax is ground then yes. Otherwise you need to grind it. A coffee grinder works great
