    Ok a lot of you know my opinion of flax :vomit but I think I have found a palatable way to consume it...note I did not say "enjoy"...I am on the fence about ever enjoying this stuff...it is very very good for you...and I would like to like it!!! but I keep tasting ..well...flax....I used Barbs flax bun recipe and it was better but I could not say I looked forward to it as I do the other wonderful recipes Barb has given me...so I have over the past couple of months been playing with it..and FINALLY came up with something that tastes kind of good and can be made quickly and tossed in a bag if I am on the run

    take and beat the snot out of two jumbo or three large eggs
    then add 3 heaping Tablespoons of flaxmeal 1 pinch of salt, pinch of baking powder, 2 tbl butter ..1 tsp of Ameretto extract (or almond) 1 tsp vanilla extract 2 tsp Splenda, 1 tbl cocoa powder and 2 Tablespoons of toasted pinenuts (leave out if on induction)...stir well ...spray a bowl with cooking spray and nuke it for 3-4 min on high...take out of the bowl and if the bottom is damp put it damp side up on a plate and nuke it for another min...this is a dry bun that slices well....and tastes better than any I have tried so far it kind of puffs like a popover and holds up well in my lunch bag....
    I spread cream cheese on it and voila' an ameretto flax bun!!!

    I make flax muffins, Not2lates flax chips, and Nullos wonderful flax bread recipes are in the data base.

    I love flax breakfast cake too. 1/2 serving whey protein powder of your choice, 2T of flax meal. mix add 1T oil or cream (Cream will give you the pudding option.) cream the mixture then add 1/2 Cup water and stir well until you have "developed" the flax as egg sub. it will get thicher and a little globby looking after about 60-90 sec. then nuke till top is set for pudding cake anout 40 sec or till dry for cake. eat as breakfast treat. you can add sweetner if you want.

      what do you do with flax?
      I'm trying to grow some in my yard this year. They apparently have nice blue flowers (and if I'm lucky, they'll seed and spread to my awful neighbor's "perfect" yard )

        I make the usual flax bun..with 2 tbpsns flax, 2 tbsns of wheat bran, 1 egg, bit of oil, sweetener, bit of water to thin. Then sometimes i add banana extract and cinamon, some canned pumpkin and pumpkin pie spice (makes a very moist loaf), or sometimes i add a good bit of ginger (i love gingerbread!), or cocoa. i've also made not2lates flax chips with splenda/ginger too..
        since i know how good it is for me i try to eat it every day..my problem is it tends to cause cravings..so i try ot have it in the a.m. just before or with my b'fast.

            Flax pancakes are pretty darn good. 2 Eggs, 2TBSPN Ground Golden Flaxseed, 1 teaspoon baking powder, 1-2 teaspoons Cinnamon Powder, 1-2 packets of Splenda. Mix well.

            Heat skillet and add 1 tablespoon butter till melted, then dollop spoonfuls of the flax mixture to make 4 silver dollar sized pancakes. Serves 2 (hubby is not low carbing and likes these too).

            Good with walnuts and blueberries mixed in the batter if you are at that stage. I like to eat these with no carb syrup and breakfast sausages.

              I thought phlox had blue flowers? ensive and flax grows like wheat?....I very well could be way wrong on this one!

                I make the "regular" flax bread, but use it for peanut butter and jelly sandwiches -- open face. It makes a nice hearty base for a little PBJ. I use EVO instead of butter. However, when making into pancakes (with a few blueberries), I have to say that it is really good. Flax zucchini muffins are pretty good too. That's about it for me and flax, though!

                      Oops -- forgot to mention this. I use the flax bread and make cinnamon French toast with it. I dip the bread slices in eggbeaters (I prefer them to eggs for this since the consistency is very smooth and the bread soaks it right up!), sprinkle with cinnamon and toss into a pan with melted butter. I use SF Log Cabin. Quite the tasty little treat!
