    So, did you ever determine what the carb count was?

      The highest on here was 21g (fast food, The Pita Pit). it's 5g for one patty, homemade.

        The first one is very basic:

        Basic Method



        Soak some dried chickpeas overnight (NEVER used tinned unless you like sludge at the bottom of your frier).

        Drain and grind up in a processor or robust blender until about the consistency of breadcrumbs.

        Mix in finely chopped onion and garlic. Add roasted ground cumin and coriander (seed), salt & pepper to taste.

        Roll into small patties. Deep fry in hot oil for a few minutes until golden brown.

        EAT! I'm sure there are lots of variations, so don't take this as the canonical falafel recipe - it's just the way I like it.

            Here is the sauce

            Tahini Sauce 1/2 cup Tahini (sesame seed paste available in ethnic foods section).
            1/2 cup plain yogurt or water
            1 lemon, juiced
            2 garlic cloves, chopped
            pinch salt
            pinch paprika
            Combine all the tahini sauce ingredients in a blender, process on high speed to make a smooth and creamy sauce. Adjust seasoning, to taste.

              It might not be Induction-Friendly but it seems fairly low carb to me!

                Yea, not as bad as I assumed it would be, however, that's w/o the pita bread that I love so much.

                  do they make low carb pitas? i've never seen them here....only tortillas and bread. hmmm you'd think they would.

                  tortillas would work but it jsut wouldn't be the same :-(

                  i also love chicken shwarma on pita as well..i'll have to look up a recipe for that too..i'd think it's fairly low carb too?

                    I've seen whole wheat pitas but they weren't whole grain, they were pretty high in carbs, I don't remember the count though.
