snacks I eat:
parmesean cheese chips: Buy grated parmesean (good quality, real parmeseasan--not the powedery stuff Kraft makes). Put in food processor and pulse until they are crumbs. Spead by heaping teaspoonful onto olive oil greased foil, covering a cookie sheet. Spread gently into a round cookie sized shape (thicker usually works better than thinner), bake in a very well preheated oven at 350 until greasy and bubbly (around 7 or 8 minutes). The longer you leave them in, the more crunch they have. I like to experiment cooking times and temperature and with sprinkling different things on them like chili powder, crushed red peppers, italian seasoning to get the best possible chip I can. Really satisfies the "salty crunchy" urges I have!
Smoked and salted almonds with Gouda cheese cubes
Jicama cubes (people think I'm weird to say it, but I looooove the way they taste like "sweet dirt". That appeals to some people. Try it, though!
Homemade sugar free ice cream made with whipping cream.
peanuts and cashews (although cashews aren't that low in carbs!)
jalapenos with cream cheese and baked wrapped with bacon slices
hot tea and lemon poppyseed butter "cookies" made with butter, soy protein powder, lemon zest and poppyseeds
always keep tuna salad (try chicken salad for a nice change--use canned chicken) in the fridge for a quick snack when all else fails. I put eggs and splenda sweetened relish and red onions in there witih mayo.
ham and cream cheese and red/green pepper rolls
Those are the things I am snacking on these days. But it changes, as I get bored easily. Just gotta experiemnt and read recipes and spend time in the kitchen ahead of time to keep yourself armed with snackage.
