That sounds goood! I think I'll do that tommorow, I've got all the ingredients. Tonight is just burgers and some sort of veggies, guess I should figure that out before my hubby gets home.

I'm trying something new, Eggplant Parmesan, and a big huge garden salad, and berries and whipped cream for dessert!

We had my crock pot special. It can be a soup or a stew, depending on how much liquid the vegetables release.
Basically just throw all this in the crockpot:
1 can of tomatos (the big can, not the regular size can)
spices - I used italian blend, garlic powder, sea salt, and fresh ground 3 peppercorn blend...use what you like, there's no set formula here.
browned beef (I use something our grocery store calls 'marinating steak')
In olive oil, saute some onion, celery, peppers (whatever colour or combo of colours you like) and mushrooms, and add them in. Kale is good in this as well. So is spinach, but you want to add that about an hour before you are ready to eat, as it cooks down quite quickly.
After an hour or so add in some zucchini cut in 1 inch chunks and mix them in.

Ladle into warmed bowls, sprinkle with cheese...it's pretty good, especially on a cold day. Bf likes to sprinkle red pepper flakes on his as well.

Roast beef hash! On Sunday I did a roast beef (something I don't do often). So I have loads of leftovers.

So what do you use in place of potatos in your hash?

Please don't say cauliflower *crosses fingers*

Karen, have you seen the recipe for fake corned beef hash?

Its cooked with radishes instead of potatoes.

M y gf has recently played with the Faux mash potato recipe.

We found it too garlicky, so we dont put any garlic any more. Last Sunday we added brocolli and it was lovely.

I've tried that faux potato recipe a couple of times, YUCK! is all I can say, and the funny thing is that I love cauliflower--I just don't love it when its pretending to be potatos!

"Petal" is sweet isn't it Aphex, you know those charming English men!

Tonite we're having lasagna, John's with noodles, mine with eggplant. and a freshly picked salad (out of my garden) with ginger dressing.
