  • Cinnamon Flax Muffins!

    i would really like to thank the person who created this recipe cos it's amazing. i could probably eat 10 at one shot as it tastes so much like a real muffin!

    my question is, is there anyway to make it lower in calories? one muffin has about 500cal!! and cos i'm not tall, my AMR is only about 1300cal. i was thinking of substituting one tablespoon of the fat with egg white. will that work?

    thanks in advance! and here's the recipe, enjoy!

    3 T Flaxmeal
    2 T Butter (unsalted)
    0.5 t baking powder
    2 pkt splenda (or just one if you don't like it too sweet)
    1 egg
    2-3T Ground Cinnamon (the qty is correct, however i use only 1 T cos cinnamon is expensive in singapore!)

    beat melted butter and egg together,
    add everything else and beat.
    let stand for two minutes
    microwave for 1min45sec and VOILA! can top with sweetened cream cheese, or whipping cream if you like too!

    I haven't done the arithmetic, but doen't you mean the whole batch of muffins is 500 cals?

      I think 500 sounds high for calories for this, I like this recipe too. As I got to goal I substituted the butter with pumpkin to lower the calories. Still tastes good, sometimes I add berries too. This is my treat for weekends! Actually I use pumpkin a lot as a substitute for butter when baking since I am at goal now and am only interested in maintaining it allows me to control the calories better, I am short too!

        When I enter it in Fitday, I get 396 calories (this is with 1 tablespoon cinnamon). Unless you put cream cheese or whipped cream on it? Then the calories would go up to 500 depending on how much you use.

          Hm, interesting! At what ratio do you substitute the butter to pumpkin?

            labarum: the whole recipe is one big muffin! try it if you can afford the calories!

            goin2BGood: that's strange, mine is 467 in fitday!
            butter, unsalted 2T 204 cals
            flax 3T 177 cals
            cinnamon 1T 48 cals
            baking powder 0.5t 2 cals
            egg, whole 1medium 66 cals
            so total is 467 cals, is yours the same?

            tentcamp: ooh pumpkin! that's an idea! i tried it again today with 1T of eggwhite to substitute 1T of butter, works fine actually, yay!

            thank you for the input, this muffin really is a must try!

              hmmmmm, I am thinking I may try this in the morning!!!! seems I sawa a recipe for icing somewhere- better look for that!!!

                  I substitute 1/4C pumpkin for the butter. I would think it could be flat without the baking powder, but then I've never tried it. I also have a shaker of cinnamon and Splenda mixed and when it is finished I put spray butter on top and sprinkle a little of the cinnamon and Splenda mixture on top. Even with all that cinnamon in the recipe it dosen't taste very cinnamony (is that a word?) to me, so I cut down on what I put in the recipe and sprinkle it on top where I can taste it better.

                    I make a variey of flax "breads" or muffins.

                    You can reduce the flax and introduce some protein isolate.
                    I use either all olive oil or half oil and half butter.

                    2 tablespoons flax seed (before grinding)

                    and

                    2 tablespoons cocoa powder

                    or

                    2 tablespoons protein isolate and 1 tablespoon of italian herbs

                    works well with the fat/oil and egg

                    Or I use golden flax with protein isolate, grated lemon rind and the juice of a whole lemon.

                    I just microwave any of them very quickly.

                        Joining this conversation kind of late. Quick question.... I see you all talking about calories, but unless I missed it I don't see anything on the carbs. Can someone tell me what the carb count is for the recipe at the top? It sounds good. This will be my first time trying flax meal.

                          jpierce: according to fitday the whole recipe has 19-14=5 netcarbs

                          however, please check the label of your flaxmeal cos they differ. i use bob's red mill and that has 0 net carbs!

                            actually flax is not zero carb and many mnay new Atkineers get caught up in misreading their lables. if you look that label is for a very small serving size 1 or 2T and the labeling law says they can round down if they have less then .5 net carbs for their serving size so when you have more then their serving size that carb count goes up to a countable number but if you think of it as 0 for ther whole product then you can start real fast to get carb creep. Also remember if you are in induction their is more flax in that muffin then allowed until your get to OWL rung 3.

                            there arer actually .78 net carbs in 2T of flax meal according to the USDA

                            You can lower your cals by subbing the pumpkin mentioned above for the butter or you can make your flax be the egg too and lewve it out as flax and water stirred until it get globby can be subbed for eggs in cooking and flax can be subbed for fats too so just use the flax the spice and the water and stir it well and allow it to sit to develope before you cook it.

                            thast is a lot of cinamon and a lot of carbs for the cinnamon.

                              I'll have to try it without the egg. I thought I had and it didn't raise very much but maybe I didn't let it sit long enough. It kept getting thick so I kept adding water thinking it was going to be really hard if I didn't. It takes much less cinnamon if you sprinkle it on top where your tongue tastes it. I don't taste it if it is in the muffin although it smells really good!
