  • BEST Pancake/Crepe recipe - 1 carb each!!

    I just came across an awesome recipe that I HAD to share!! The recipe was actually for waffles but I decided to try it as pancakes on my nonstick griddle. These are wonderful, wonderful, wonderful!! They didn't really require any syrup although I did use about a teaspoon on mine - sugar free of course...

    These cook up quite thin - like crepes with crispy edges. I am going to use them tomorrow night at a get together I'm going to - I plan on mixing some DaVinci's SF German Chocolate syrup into some cream cheese and rolling them up.

    Here's the recipe. I wasn't sure what the "whey protein Isolate -- vanilla" was, I used my Carb Safe Vanilla flavored drink mix instead. I am thinking any vanilla protein mix would work. I used calorie king to figure my carb counts, I figured each pancake/crepe was right about 1 carb. Let me know if I figure wrong please.

    1 cup cream (6.64)
    1/2 cup water (0)
    3 tbsp oil (0)
    2 eggs (1.3)
    1 1/2 cups whey protein Isolate -- vanilla (9 - yours may be more or less)
    2 tsp baking powder (2.6)
    1 packet splenda (1)

    Mix well & then pour onto lightly greased griddle (setting was at 350) These are fragile - wait until the entire surface is covered in bubbles and the sides look cooked before turning.

    I layered them in between papertowels. This recipe made 21 nice sized pancakes/crepes.

    It's now hours later & the kids wanted a treat. I heated up the cream cheese - about 2 tablespoons, added about a 1/2 teaspoon of the SF german chocolate syrup. Then I heated up the crepes for about 10 secs in the microwave and spread the cream cheese mixture on it and rolled it up. The kids were happy - great treat! I had a bite of each and they were yummy!

      I just made a batch of the following
      1 cup cream (6.64)

      The first pancake/crepe was difficult to flip and it did break apart quite easley. I added another egg in hopes that this would make it more flexable and it did help but not completely.

      Has anyone else tried this recipe and what was your experience?

      BarelySane, Did you experence this brittle pancake/crepe too? What did you drink mix measure out to?

      I combined a pkg of Cream Cheese and 1/4 cup of sugar free Kahluha syrup. Yummy.

      With the cream cheese mixture this is very sweet and the crepe alone is very filling. It's a very nice treat.

        Hmmm - strange - mine weren't brittle at all! They were very much like a crepe. Maybe its the protein mix. The recipe called for whey protein Isolate which I didn't have nor do I even know what it is (I'm sure all of you do!!) so I just used this Carbsafe vanilla drink mix. I'm thinking that must be the problem since mine were very pliable, again, like a crepe. I have no clue where I even got this drink mix which kinda stinks since I've been using it to make all sorts of goodies and am now close to being finished with it!! Sorry your results wern't like mine!

          From what I've been able to find on the net, I think you must have bought your vanilla mix at Trader Joe's? It also seems that TJ's has discontinued sales of their entire CarbSafe line.

            Is this in regards to barleysanes drink mix. I have and used Designer Whey Vanilla.

            They were very tasty and filling. Just not very flexable. We'll keep trying.

              Oops! Yep, that was regarding the CarbSafe Vanilla that barleysane mentioned. She said she couldn't remember where she bought it and was going to need more soon.
