  • Freezing the Mock Danish recipe?

    Has anyone attempted to make quantities of the Mock Danish recipe and freeze or refrigerate them for reheating?

    Boyfriend on Atkins is a non-chef who can just barely use the microwave, and I'm trying to prep him some food in advance.

    omg that thing is like a rubber disc of course you could freeze it what harm would it do to it? I cracked myself up the first time I made one!!!

      yup if he likes them line them up and freeze them I bet they are the same when you thaw them as when you put them in there!

      I make them because they do not change shape or size during transport even when I chuck them in a paper towel and on the seat of my car and do not remember them until on the way home ...and then eat them

        I sometimes make one the night before in a Tupperware bowl, stick it covered in the fridge and then reheat in the microwave at work the next morning. The only problem is that they can get dry from the reheating process. I've found that if I put some pumpkin in, it's less dry and pretty yummy.

          yep under cook it slightly and then you hsould be fine.

          you can add some flaxmeal and it will get more bread like if it is too rubbery.

              I always make mine with flax, so that's what my post was directed to. I'm not sure what would happen with just the egg ones.

              2big - I've found when I undercook the flax cake to reheat it the next day, it heats up, but it doesn't get any more cooked. I can't explain it.

                the more you heat flax the drier it gets. it doesn't hold moisture like some fibers do.

                          I read through the recipe a couple of times. Do you literally just mix/beat the cream cheese with the egg and bit of flax + other stuff all together so that it is a homegenious liquid before nuking it?

                            just stir it up andpoof it nukes don't makeit too homogeneous and you will have some creamcheese pockets like real cheese danish do

                              I finally made this this morning. Wow, great! I put 2 packets of splenda with 1.5 oz Cream cheese with some cinnimon. Nuked it for 2 mins. It was too sweet but still very very tasty! It does almost taste like a danish!

                              Next time:

                              2oz cream cheese
                              sprinkle of cinn
                              1 packet splenda
                              1 egg

                              Like 300 calories of delciousness!
