  • What's for dinner?

    I made a huge pot of homemade veggie beef soup yesterday, so we are having that and a salad. I love not having to cook on a Monday nite!

    I have no idea. I got back from Kansas at 2:00 am. I don't have anything in the fridge. I've gotta go to the store.

      I had pork chops and some mixed veg.

      I have since re-gained a bit of weight, but that is soon to be coming off again!

        I made cream of cauliflower soup last night..probably have that with something since that wont be filling enough.

          Dinner is Chicken Fried Steak, dredged in egg white and breaded with pork rinds. Baking a pumpkin pie right now for dessert.
          No stats. Not weighing anymore ever. Will post "before and after" pictures when I want to. The end.

                Ok, after Heidi's thread about Danish Blue cheese, I had to try the stuffed mushroom caps that Mrs. Lee suggested.

                So for dinner last night, we had grilled pork chops.

                A green salad with onion, olive oil, salt and pepper

                Portabello mushroom caps, stuffed with danish blue, and melted butter, and broiled til brown and bubbly. It was awesome!

                  Since I did some cooking over the weekend, tonite is spaghetti with homemade spaghetti meat sauce. I will be having dreamfields spaghetti and John will have his regular angel hair and of course we will have a big ol' salad to go with it. I've got to stop and WholeFoods and pick up some parmesano reggiano (or however the heck you spell it! lOL)

                    yummmmmm they are wonderful aren't they???? I did not realize to be honest how much differant the Danish blue was from regular blue it is so creamy and mild ....then the butter and mushroom OMG perfect combo

                    tonight I am going to make a mild curry chicken with kind of a tomatillo chutney salsa thing with the stuff I bought yesterday ...I had an international day and the mood is still inside me ..I made a coconut jel dish that is cooling now with the agar agar I bought it tasted awesome when I stuck my finger in it

                    I want to post this one especially the salsa/chutney thing these tomatillos are beautiful....

                    I have a friend from Fiji who always puts Mexican salsa on her curries as a condiment and had lunch with her yesterday ...she inspires me so much!!!

                        Hmmmmmm and Mog has me thinking I have a bunch of odds and ends of veggies here I could make a pot of soup for lunch....
                        my work was canceled this week so I want to do some cooking for sure...and I spring cleaning ....

                            I got loads of fresh salmon today so its Grilled Salmon fillets and having sliced boiled egg with them

                              I think we're going to have some tilapia with mushrooms for dinner... it's 10 a.m. here so I haven't made up my mind yet.
