    Salmon Patties...

    I was rummaging around in the cupboards and found a can of Salmon. I looked at some Atkins recipes and found the salmon patties. I was VERY skeptical about the whole "pork rinds" thing for the "filler".. but man these things are awsome! Other than a little heartburn, they are a welcome break from what I normally have been eating for lunches!

    I have also used tuna and dredged it in parmesan cheese. Put them in a pan with butter and get them crisp on each side and they are awesome!!

      I skip the pork rind thing altogether. I use egg as a binder. Form them into patties and bake them.

      They're great for breakfast too.

        I make mine the same as not2late. I didnt think that I would like it much, or they may be runny without oatmeal or a staple of the sort, but they are amazing!

          We use egg as a binder. Eggbeaters work great!!! We have salmon atleast twice a week. Its something that we all like. My whole family is on the Atkins Diet!
