The recipe is from Jaffrey's book. I think the recipe is called chicken in a light tomato sauce. Anyhow, it's chicken simmered in an onion, garlic, ginger, cardamom, cinnamon, chili (I don't have the dried chili, but I have some fresh jalapenos and will use that), cloves, tomato, and something else. I chopped the onion, ginger, jalapeno and garlic this morning and will toss it in the blender, along with the other spices, when I get home. I'm using boneless, skinless chicken thighs, so it won't matter if I overcook the meat or not.

I am going to switch gears put the collard greens and some of those seasonings in the pressure cooker with the pork loin and see what happens...broad beans tomorrow maybe ..today maybe a walk
Well, I had to come here and post about that recipe.....It's simmering away right now and probably needs another 15 or 20 minutes. It smells fabulous! My whole house smells fabulous!
And the cooking technique is giving me ideas on how to adapt some other recipes I have.....
