  • Spring Cooking Challenge Guys Come One!!!

    I challenge all of you to toss out the name of a food you have been wanting to eat but it is way too high carb..each week we can pick one and ..let's turn high carb into low carb one dish at a time....with out sacrifice of visual appeal or taste....

    WHO IS UP FOR IT?
    we did it previously for the Thanksgiving before last..I think Megs?
    It was really fun...

    I WILL BE HAPPY TO TOSS AN IDEA TO GET THINGS ROLLING!

    It is selfish I know but I am having this party coming up I told you about... and am wanting to figure out a low carb spring roll ..it does not have to be traditional ..but I would love to have some crispy filled roll with a sweet and sour sauce for dipping...

    so if any of you want to try to come up with a variation on a a spring roll that fits this way of eating then make it this week...share the recipe and if you like share pics of how it turned out....

    I am going to start today ...and I challenge you!!!

    Wow! That sounds like alot of fun! Count me in! Now I just gotta choose which food I want to toss out there.... Hummm... Let me get back to you on that one!

      Well you could roll the contents of the spring roll in a lettuce leaf instead of the shell.

      Or you could make it into a taco-style spring roll by making a small taco shell with cheese and putting the spring roll contents in it.

      I'm not sure what's in the contents of a spring roll but I'm assuming the shell is the high carb part.

        good ideas wanna

        the filling is quite low carb the way I make it I use shredding chicken and veggies like peppers, onions, cabbage..sometimes tofu..lots of seasonings like ginger garlic chile and soy all mixed up and instead of cornstarch to hold it together I will use a beaten egg....maybe try putting some shirataki noodles for laughs? has anyone put shirataki in a handroll or spring roll?

              OK, I found these directions for the wrappers. So you could simply sub almond flour for the flour, yes??

              INGREDIENTS:
              • 1 cup bread flour
              • 1 egg, beaten
              • 1 tablespoon cold water

              DIRECTIONS:
              1. <LI style="FONT-WEIGHT: normal; COLOR: #000000">Sift bread flour into a medium bowl and make a well in the center. Place egg and cold water in well. Beat with a wooden spoon until a smooth dough has formed. Use more water as necessary. Knead until elastic and pliable. Cover and chill in the refrigerator 4 hours, or overnight.
              2. On a lightly floured surface, roll the dough into an approximately 14x14 inch square. Cut into 12 equal squares. Roll each square into a very thin 6x6 inch square. Refrigerate until use.

                  OMG Heidi you are a goddess! Just the idea of this thread makes me super happy. Let me think....I love my sweets. How about a chocolate chip cookie that doesn't taste like Atkins Bake Mix flavoured grossness?

                      You can get that Nestle pouring chocolate. It comes in four ounce packs and is sugar free. I pour it out, freeze and smash it to make my chips ^_^

                      (Very fun to make!)

                        I don't have proper chips, but Trader Joe's sells a low carb Splenda sweetened chocolate I could break into bits...

                            chocolate chips Stella style

                            1 oz unsweetened choolate, chopped (Bakers)
                            1/2cup sugar substitute (splenda)
                            2 Tablespoons heavy cream or butter

                            1. placethe unsweetened chocolate in a heatproof bowl and melt over a saucepan of simmering water

                            2. Whisk in the sugar substitute, then thin with the cream or butter. Whisk to blend thoroughly. Remove from the heat, spread on a plate covered with waxed paper. Freeze for about 15 minutes.

                            3. Break into small chunks after chilling to use in your favorite recipe!
