    Ha! I have one batch OUT of the oven already. And DH said "REAL good! These are low carb?"
    They have almond meal and oat bran so they are for the last rung I am sorry to report to you inductioners.

              Well, here are mine. Anybody want the recipe send me a PM with your email address. I have the recipe scanned. (oh, 3 carbs per cookie,according to the recipe. However, mine are bigger so I got less than what the recipe calls for)
              Also used chocolate whey protein powder, instead of vanilla, cuz that's what I had on hand)

                        Ive had two types of springrolls.... one that was fried. another that was wrapped in a lettuce leaf. Since you mentioned springrolls=eggrolls..... how about blanching all your veggies then laying them out into log shapes, freeze them for just a bit to get them so they stick together, dip them in an eggwash and then roll in parmesan cheese and fry.
                        If you want the wrapped leaf non fried style... Id still LIGHTLY blanch the veggies, then blanch cabbage leaves and roll the veggies int eh cabbage leaf.

                          I am liking that idea Tired I will have to think on this ...the only thing would be the flavor of cheese with an asian filling ...but I could do something else with that like maybe some sesame seeds or something...

                          I am going to make some lettuce rolls as well and my usual Korean Style California rolls

                          I just wanted something crisp too that was low carb....

                          maybe I could use tofu pockets?

                            hmmmm the tofu pockets gave me an idea.....

                            cut pieces of tofu into logs. use a pastry bag (or plastic bag with a corner cut out)to pipe your blanched veggies into the middle of the logs.
