    LOL Pau. I was afraid of that too. But I froze them and I still have some left actually. I pull one out every once in a while when I get that sugar urge. It's nice to have something legal handy that takes care of the problem!!
    I got a pressure cooker Pau! Now where is that rib recipe???

        Well, I ate my last chocolate chip cookie today. I had them in the freezer since I made them. I am going to have to make some more, almost PMS time. It was really nice to have them handy for a "fix"!

          Ok all I want to play too!!!! NAy group of gals who can use 30 kitchen items in one meal/recipe is my kinda gals I use all my kitchen stuff making things and trying out recipes. I am thinking about the spring roll thing..my sisters mother in law is Phillapino and makes great spring roll/egg rolls so I will maybe try with crepes.

          I'm thinking hard about what I really would like to make low carb...HMM I love Flan but I've tried a few baked custard recipes that are close enough with SF honey on them.

          Hmmm...I'll let ya know

            I went to lunch yesterday at Longhorn steakhouse with my mom...as I was perusing the menu of the things I couldn't have I sat there thinking about how I could make them low-carb. Here's what I came up with:

            Southwest Egg rolls:
            Use low-carb tortillas (3g carb) stuff with shredded chicken with cumin and hot sauce? Tomatoes, onions, peppers. Top with avacado and sour cream?
            Chimichangas:
            Low-carb tortillas stuff with ground beef or shredded chicken...use mexican spices. Onions, cheese. Top with avacado and sour cream.
            Chicken and Dumplings:
            Chicken, chicken broth, thickener (xanthan, guar, thicknthin NotStarch) cut tortilla strips up to make dumplings.
            Fried Cheesecake:
            Any cheesecake recipe, wrap in lc tortillas and deep fry or bake. Top with berries/whipped cream.
            Apple Dumplings/Turnovers:
            lc tortilla (see a pattern here), chayote squash recipe from Linda's (and other thread), wrap in the tortilla and bake. Top with whipped cream. I might whip in some of my vanilla whey protein isolate with the cream to make it taste like vanilla ice cream. Maybe add some caramel davinci's syrup too.


            Now, I'm gonna have to make all these recipes and take pictures for you all.

              you know Valid I never thought of a low carb tortilla to make a lc eggroll

              DUHHHHHHHHHHH

              I have made chimichangas with them why not an eggroll?

              but since I am completely burned out at even looking thinking or talking about egg rolls...I have to wait a while for the desire to return!!!

                I hear ya girl. I didn't think of it either until yesterday. I haven't been able to find the lc tortillas around here...but the other day I got some at WildOats when I went there. Of course, my mom started whining, so I gave them to her. Have to go back this week and get some for myself. As soon as I do, I'm gonna be cooking some new recipes.

                I can't wait to try the "apple" turnover/dumpling thing with my new found chayote squashes.

                  Okay, I made beef chimichangas tonight and had company over for dinner. They were a smash hit!

                  I took chuck roast and put it in the crock pot with 1 cup of water, cumin, onion powder, chili powder and salt and pepper. And some fresh onion. Let it cook until soft .... smelled sooooooooo good.

                  Put the meat and some cheese in the tortilla, wrapped it up, spread butter over the tortilla and baked until the tortillas got crispy.

                  Topped with freshly made guacamole (avacado, little fresh onion, fresh tomato, salt, pepper, lemon juice) and sour cream.

                  Because I didn't fully measure, I don't have exact carb counts. But, these were a fantastic hit with adults and kids alike.

                    Sam's Club here sells a brand of low carb tortilla's called Carb Choppers and they are very good and the price is great. They are 6 net carbs each and they are large, burrito sized. I am currently not eating them as I haven't started back on grains yet but DH who hates "diet" anything likes these better than regular tortillas. I bought an extra pack and froze them as I am afraid they will quit carrying them.

                      Okay, I made the chayote squash turnovers this weekend. They were a hit!
                      I posted the recipe in the desserts thread too.


                      1/4 stick butter
                      1/2 cup splenda
                      1 tsp ground cinnamon
                      2 peeled and pitted chayote squash sliced like apples
                      melt butter in pan over medium heat
                      add chayote squash and sautee for a couple minutes
                      add splenda and cinnamon
                      cook until squash is tender

                      Meanwhile, soften 1 8 oz package cream cheese
                      add 1/2 scoop of vanilla whey protein isolate
                      blend until smooth and creamy

                      cut 4 large low carb tortillas into quarters
                      spread cream cheese mixture into center of each quarter
                      Put a table spoon (or so) squash mixture into each center
                      fold edges over and put a toothpick in to hold them together

                      bake at 350 for 25 minutes

                      meanwhile put 1/2 cup whipping cream into leftover cream cheese mixture and whip until stiff

                      Makes 12 or 13

                      Based on 12 servings:
                      Calories: 133
                      Fat 8.5 g
                      Carbs (total) 8.5 g
                      Fiber 3 g
                      Net carbs: 5.5g
                      Protein: 6.4 g

                      I wish I'd taken pictures as I was making them...but here they are cooked.

                        Valid has been busting out the genius ideas. I can't wait to make fried cheesecake! I'm waiting for sugar free chocolate chips in the mail and then I'm all over Barb's recipe.

                        HOWEVER, I have a new challenge food. How about chicken pot pie with a crust that isn't weird and gross and a gravy not thickened with cornstarch?

                          Oh yeah those look great Valid!
                          Killer, I use xanthan gum for thickener. Have for a long time. Use it sparingly!!
                          Hmm, chicken pot pie. Man I love that stuff! I just collected a whole bunch of stuff I never heard of (wheat protein isolate, and other such things) so I will see what I can find this weekend in way of a recipe maybe....

                            Killer, what about putting the low carb tortilla in a pie pan, put all the filling in and cover with another and bake? The tortillas get hard when you bake them. They would be mushy on the bottom though.

                            For the filling I'd use chicken, green beans, maybe some of my chayote squash (LOL) any veggie you like and then thicken with some cream and puree some of the veggies to thicken too.

                              Yeah I think the problem would be mushy bottom. But I remember doing my own version of pot pies. Making the filling and then baking it with those Pillsbury bisquits on top. Or even on the side and then using them for the bottom just having the chicken and veggies and gravy over top. I did see a recipe for a LC pie crust. I wonder if that would work? Prebake the crust then fill it. Hmm. Something to think about for this weekend......

                                here's another recipe that I tried...once with success and once without:

                                They are cream cheese muffins:
                                2 8oz. pks. philadelphia cream cheese
                                1/2 cup sweetener (I use spenda)
                                2 eggs
                                1/2 tsp. vanilla

                                I used 1/4 cup vanilla whey protein isolate and 1/4 cup splenda. My whey protein isolate is sweetened with stevia, and next time I make them I'm going to use the entire 1/2 cup instead of the splenda. These were true little gems. My husband, stepson and mom all went nuts over them.

                                I tried making them 'savory' adding some sour cream and some fresh chives, but then I went overboard and added some ranch dressing mix...and they were NASTY!!!!!

                                I might try them again and add some really good gouda cheese to them and leave out the ranch dressing mix.

                                Killer, this mix would work FANTASTIC for making the fried cheesecake.
