I made these yesterday and wanted to share them with you...I love Korean food...well I love food
the nicest thing I think about all the side dishes involved in Korean cooking .. ..you can spend a day of cooking and have a week of lunches ...this wonderful food that evolves during the week because it is really like a bunch of different pickles ....
here are two dishes that are my favorites.... during the week I will bring these with some deep friend tofu ..or grilled Korean style grilled chicken, beef, calamari..whatever ...
Korean food has lots of low carb choices
the first dish is the Korean bean sprouts ..made with nutty soybean sprouts they are so good and good for you!!!
the second is a dish made with that lc/no carb yam cake..(the same thing shiritaki noodles are made from you can find it in a Korean or Japanese market or in better stocked grocery stores where the tofu is) I cut it into cubes saute some prepared kim chee in sesame oil mixed with a little canola oil then toss the cubes of the yam cake in this and serve warm or cold.
recipe for the Bean sprouts
take about 1 lb of soy bean sprouts and drop them in a pot of boiling water for about 6 minutes drain
lightly pound (do not crush them just crack them up a little to release the flavor ..1/4 cup of toasted sesame seeds the mix them with 2 tsp kosher or sea salt
mince 4 fat cloves of garlic
also cut small 1/2 cup green onions
1 tbl Asian red pepper flakes
1 tbl sesame oil mixed with 2 tbl neutral salad oil of your choice
add the oil to a skillet then toss the rest of the ingredients in ..cook over med for just a minute or two ..then add the bean sprouts and let it cook for about two minutes...
you can eat these warm or cold
