    Pork tenderloin that I roasted on the weekend and put in the freezer. Turns out everyone wants it tonight so that's what we're having. I think we'll have sauteed cabbage and green beans with it. And the fambly cab have leftover mashed potatoes from the weekend.

    I heard there's a good recipe for taco shells somewhere. lol Maybe you can have that. hee hee hee

      Its the start of the month, so now I have the money I will be having a rib eye steak.

      It never ceases to amaze me of how easy and how effective this ***diet*** is!!




      I have since re-gained a bit of weight, but that is soon to be coming off again!

        Here's a favorite I've been making for lunch...chicken breast tenderloin marinated in lemon juice, lemon pepper and garlic. Melt real butter in a frying pan, and add some frozen broccoli; few seconds later add the chicken and stir fry till done. Yummy!!

        I used to roast chicken in the oven and no matter what it was always dry. Cooking it in REAL butter makes a huge difference. Plus...the lemon and butter get on the broccoli (and cauliflower if you like), and it's the best broccoli I've ever had!

          Yum, everyone's dinners sound good so far!

          I want another steak but we just had some on Sunday nite. We had chicken Monday and pork chops on Saturday.

          Hmmm, I really want some shrimp but John doesn't really like them unless I make them marinated in garlic and basil, wrapped in bacon and grilled! I'm really not up for all that work tonite.

          Decisions, decisions.

            Faux-rittos!

            I've been experimenting with low carb tortillas to see how they affect me. So tonight, I'm going to make a sauteed ground meat mixture. I'm not going to roll the meat into the tortilla, but rather I'm going to eat it by tearing off bits of the tortilla and using that to scoop up the meat mixture.

                Faux taco salad. Cooked up a pound of ground beef seasoned with taco mix yesterday; fill a bowl up with that, add celery, chopped tomatos and onions, and ranch ranch ranch. So filling, so tasty.

                      I just had burgers!
                      I mixed the beef meat with: mustard, 1 egg, perrins sauce, radish sauce, cummin, salt and black pepper. Then I fried 1 onion. Fried the burger, put onion on top, then cheese and grilled for 2 minutes.
                      I´m my best friend and my worst enemy.

                        Pollo in Umido... which is basically chicken pieces cooked with onions, garlic, celery, a little chili, wine, lemon juice and a touch of tomato concentrate... oh and all important: fresh sage and rosemary. When the chicken pieces are cooked, you reduce the sauce to just a few tablespoons worth. Really tasty. Sometimes I put rabbit in with the chicken too.

                        Veggie is tossed chicory and endive.

                        Dessert... ummm maybe greek yogurt with splenda, or strawbs and cream.

                        Now I'm hungry for dinner and over here it's still breakfast time!

                          tonight and it may change I am having
                          Korean grilled chicken
                          with shirataki noodles in sesame dressing and
                          this tofu dish
                          strawberries
                          Korean-Style Tofu

                          Serves 4
                          • 2 blocks firm tofu, drained, 350 grams each`
                          • vegetable oil
                          • 1/4 cup soy sauce
                          • 1 1/2 tsp. sesame oil
                          • 1 Tbsp. Splenda
                          • 1 clove garlic, minced
                          • 1 Tbsp. toasted sesame seeds
                          • 1 Tbsp. hot red bean paste, or to taste
                          • 2 green onions, thinly sliced
                          Preheat the broiler. Cut the tofu into ½-inch slices. Lightly brushed a rimmed baking sheet(s) with vegetable oil, place the tofu in a single layer on the sheet(s) and lightly brush the top with oil. Broil, as close to the heat as possible until the tofu is lightly browned. Turn over and brown on the other side.

                          Combine the soy sauce, sesame oil, Splenda, garlic, sesame seeds and hot bean paste. Heat the soy mixture to a boil in a large pan over medium heat. Gently add the tofu in a single layer. Turn down to a simmer and cook for 2-3 minutes, spooning the mixture over the top of the tofu. Sprinkle with the green onions and serve.

                          Total Carbohydrates: 25.6

                          Total Carbohydrates Minus Fiber: 16.3

                          Carbohydrates per Serving: 6.4
