Sub the flour with something like whey or soy protein. Or you can try leaving the flour out because it looks sorta like a Spanish tortilla.

No leaving the flour out would make too omlettey (is that a word? LOL) I hadn't thought about whey, I've never used it, can I sub it 1-1 for the flour? I'm a little leary of soy flour.

If you sub with the protein powders, add alittle at a time and mix thoroughly, checking for consistency. If the Atkins Bake mix doesn't bother you, you could try that as well.

You know, I can't remember if I threw out my Atkins bake mix or not, I think I'll check to see if I have that first! So Whey is a protein powder? I guess I buy it where the body builders stuff is in the store!? Can you believe in all this time on Atkins I have never checked out Whey or Soy powders?

I can believe it. I have a bag of whey protein concentrate from Bob's Redmill that I use very seldomly for things like cauliflower fritters.

Anyhow, use the unflavored and see what happens. If the flour is used to "glue" the mixture, you might also want to add gum or fiber. I use Benefiber (it's hydrolysed guar gum) whenever a recipe calls for flour to bind the ingredients or to soak up excess liquid, like with vegetable pancakes/latkes.
