  • Zucchini Hash Browns/Pancake

    Hey all.

    I made zucchini hasbrowns yesterday, and boy were they tasty. If you haven't had these before, give them a whirl.

    Grate 1 zucchini and squeeze out the water. I wrap the grated zucchini in papertowel squeeze them over the sink. Then throw the zucchini in a bowl with 2 eggs, 2 tablespoons of chopped onion, a little salt, a little pepper and stir it up. Heat up some oil in a cast iron skillet, and drop globs of the mixture in. Let them cook a few minutes, and then turn. I use the spatula to mush them into pancakes. This might seem weird, but I ate them with a horseradish/dill sauce, and they were good. Next time I'm going to add a little feta & olives.

      somes good. i was worried it was going to be add syrup type pancake. My mother used to make something like this but called it croquets and added bread crumbs.

        Well, I'm not into sweets, but I suppose folks could add splenda and cinnamon if they wanted a zucchini bread type flavor. I prefer savory flavors myself.

              Oooh, I saw this on Low Carb and loving it show on food Network. I think he made them as substitutes for Potato Pancakes (Latkes). I wanted to make them really badly.

                MOG, the sauce was 1 tablespoon of mayo, 1 tablespoon of sour cream, and 2 tablespoons of horseradish, and I added some fresh dill.

                  Sounds yummy! I love sauces! and I love horseradish! I'll have to try that, I even have fresh dill growing that I can use!

                        Miss Phode, I found a basil and feta cheese spread recipe you might want to try--of course skip the high carb things to spread it on...but I'm sure you can find a low carb use for it! It looks good!



                        INGREDIENTS

                        METHOD Process basil and and chives in food processor until fine. Add feta and garlic until well mixed. Add enough olive oil to make spreadable. Spread on bread, crostini, or little pizzas, dollop on pasta, or add to soups or vegetables
