Queso Blanco (Mexican Frying Cheese)

    MoG's right about that cheese recipe. It's similar to the ricotta cheese I made over the weekend. And the hardest part about making that cheese was waiting for the milk to boil.

    But it's given me an idea. I still have some of that ricotta and maybe I'll try to fry it.

        The only difference between the queso fresco recipe and the ricotta cheese recipe is the ricotta includes 1 cup of heavy cream per 2 quarts milk. The cream might make it more melty, but then it might not.

        And the ricotta I made is drier than the stuff in the stores....If I give it a try, I'll report back.

          That's wild how you can change the recipe just a tiny bit and get a completely different cheese isn't it?

                Morning Ladies! There is a local company here that makes Queso Fresco. It gets MELTY when putin a pan, it doesnt fry. Best way I can describe it is picture a small ball of mozzarella- when you bite into it, the inside is gooey and melty while the outside holds its shape.

                Frying cheese is ADDICTIVE. My locally availbale version is Queso Panella. (same brand that there was a photo of a few pages back). Frys up the same way as pictured. (In a pan, I havent tried deep frying)

                  LOL, good idea...except they don't allow goat farmers in the middle of the city! And besides, I think the only animals the farmers raise around here are pigs, turkeys and chicken...pig milk would make nasty cheese I think.

                  Hey, I think I found the one I'm gonna try to make for my first attempt at cheese. I have plenty of fresh dill in the garden to put in it, do you have any suggestion for what other type of spices might be good in this one, check it out

                      did the goats milk question get answered? didn't see it but i scanned really quickly.

                      if i am not mistaken you can actually get goats milk at walmart. it comes in a can and is located with the evaporated and powederd milk.... baking isle i believe.

                            I'm sure it would end up being very expensive to have to buy small cans to make up a gallon...but I'm going to Walmart tomorrow anyway to get 50lbs of Birdseed and a bag of corn for my squirrel babies so I'll check and see if they have it -if for nothing more than curiosity's sake.

                              you might want to check at a feed store and ask them if they have customers that come for feed for their goats. that might be a lead on where to buy it other than a can.

                                Go for it MoG! Try that lemon cheese recipe.

                                Dill would go well with it. The other herbs I've seen flavoring cheese have been sage. You might try spices like black pepper or even red pepper flakes.

                                I found a couple of recipes for mascarpone cheese----looks incredibly easy too!

                                I'll do a new thread with these cheese recipes and I'll put that into the Cooking Lessons Forum.
