    oh, I was thinking they were frying like breaded mozzarella fried cheese stix LOL I'm glad I just stuck to my broiled mozzarella gooey cheese stix then.

      Hmm, 2big, I don't think that was a good choice for frying then.

      Darn Megs, I wonder what's up with that?

      I notice that my curds were very small...I hope it turns out! I hate not being able to peek at it in that cheese cloth! It said to let it drain an hour or until it stops dripping. We'll see how I do.

        Megs put it in cheese cloth and put a plate on top with a can on it to press the whey out. I've done that to get "harder" yogurt cheese for a recipe

          Mog after i drained it I wrung the cheese in the cloth to get it all dried and it turned into a golf ball.

          the curds comment was about the texture when eatten after pan ffrying it. you can reall taste the lemon though which makes me think other flavored vinegars would be good too

            okay if I get some canned jalepenos can I use the juice from the can since it's got vinegar in it and then chopp fresh pepers into the cheese or do I need cooked peppers in the cheese? can I use blackend peppers if I got to cook it to smoke the cheese?

              Mascarpone update: I peaked into the container this morning. It's solid on the top--sort of giggles like yogurt. I'll find out when I get home what's on the bottom.

              I would put cooked peppers into the cheese to prevent excess moisture that might ruin the cheese.

                I was thinking about vinegar and peppers too 2big! I have a ton of cayenne peppers I need to get creative with!

                  You know Megs, with the soft cheese like 2big and I made, I was thinking that maybe using dried peppers might be a good option, my batch is a little wet and the dried peppers may just soak up just enough moisture to make it a little thicker? What do you think?

                    That might work. Occasionally, I buy that pepper jack cheese and the peppers in it look like they were the dried kind.

                          MoG, with all the flash flood warnings, tornado warnings, electric black-outs, river floodings, etc. I nearly forgot about the mascarpone!

                          Last night I pulled it out of the fridge and stuck a knife into it, it has the texture of yogurt, but I still need to drain it. So tonight I'm going to drain it when I get home and see how it is.

                            Oh, you're getting it worse than us! We have had flash flood warnings, but luckily no tornados or black outs! I hope everythings o.k.! Our rain is finally let up this morning! I don't blame you for not thinking about the cheese!

                              okay not enough acid in the canned jalepeno juices to make good cheese so i had to add some vinegar to it and then good the cheese again. glad I make it by the cup and not gallon. I'm sure the double acidifying is the reason butit is more crumbly this time when i chew it not what i want in my cheese pepper spread texture. Might be good for like a dry ricotta mix for layering in a caserole.

                              Will try again with cheese made right and peppers added nexted.
