Re: New low carb luxury magazine: CHEESECAKES

This was a LOT of brown! Here it is out of the oven. That was just not looking good to me at all!

And here after I "peeled" it LOL. The good news is the cake underneath does taste good! Now I just need to let it cool and then throw some whipped cream and strawberries on top and nobody will know the difference, right? Oh, except you guys, that I am confessing to!! LOL

I am disappointed. I took it out of the pan and the bottom is still kinda "wet". I am throwing it back in the oven. We'll see what happens. Waaaah! I know I didn't have this much trouble last time I made a cheesecake!

OK, the ONLY thing I did different was to use less Splenda. And I sprayed the pan with Pam. It did not say anything about treating the pan, I assumed. (It also did not say to add the lemon extract at any point, but I did add that)

Alright. The "wetness" is the crust, duh. I have it in the frig now. We'll see what happens. The cake part tasted good, if it's just the crust, heck we can do without that. Maybe it will harden up. We'll see.

The crust on mine is really gross. The cheesecake part is good though.

Barb, that doesn't look so bad to me. You know I made the nut crust when I made George Stella recipe even though it didn't call for it. Mine also was soggy but the flavor was good, everyone still loved it. I think in my case the spring pan was leaking. I need a new one!

here you go the recipe for the cheesecake I made that is nothing like the one in LC mag

toss the following into the blender

                        1 & 1/2 8oz packages of cream cheese
                        1/2 cup cream
                        5 eggs
1/2 cup really really strong thai tea (jasmine would work fine like 6 bags)
                        1/2 tsp Xanthum gum
                        5 packets Splenda
                        5 packets cyclamates
                        blend until smooth

crust 1/2 cup coconut 1/2 cup almond flour 1/4 stick butter(melted) pinch of salt 1 packet Splenda pat down well in a spring form pan

bake 350 for 45 min (check with a toothpick to see if done) then turn oven off and crack the door let cool for 1 hour in the oven

that is it ...you can vary this recipe any way you want using flavors and sweeteners of your choice ....
