Advice needed--Hard-Boiled Eggs

    Prep Time: 20 minutes
    Cook Time: 15 minutes
    Ready In: 35 minutes
    How to boil the most perfect eggs!

    Ingredients
    6 eggs (or any quantity)


    Directions
    Use enough cold water to cover the eggs one inch deep.

    Bring water to a rolling boil. Turn down the heat and simmer for 10 minutes.

    Plunge the eggs into cold water to stop the cooking process.

    Rap the egg a couple of times on a hard surface then roll around in your hands to loosen the shell. The shell will pop right off.

    Note: Eggs a week or so old will peel easier than freshly laid eggs. This is because as the egg gets older an air pocket grows between the shell and the egg.

      I like mine over done I guess

      The whole length time is basically how you like it done really, right? I like mine cooked very done so they are a little green grey but very yellow on the inside. I have to have eggs cooked I dunno not into any way undercooked eggs though.........lol

      To peel I do add water and I use the crack and roll on a counter method. It helps to start with the end that leaves a little bubble when eggs shrinks.

        This thread, on the simplest of subjects, is really quite educational. It certainly contains advice and suggestions that's just as valid for folks under 50 as for us, so I'm going to do the board a favor and move it to cooking/chat.

          I can hard-boil my eggs just fine and dandy....

          however...

          I can't peel them cold at ALL! It's frusturating me.

          I boil them at home and bring them to work for my salads or for a snack...any advice?

            I place my eggs in water, bring to a boil and let them boil about 20 mins. (I like em really really done) Then I put them in a bowl and run cold water over them and let them sit a bit. Then I put them in the fridge. Once they're cool I crack em and then use a spoon to get between the shell and the flesh. Other than a knick or two they come out great. Hope that helps.
            edited to add: I also use cold running water to get off any little shell bits.

              I am thrilled to see this thread. I love hard boiled eggs but hate trying to get them out of the shell.

              I do the heat water till boiling, put a lid on pan, turn off heat and let eggs sit five or ten minutes. I like them cooked but not the green colored yolks.

                Mother of Gizmo's way is the best in my opinion. I work in a commercial kitchen and beleive me when I say I have tried them all, the bring to the boil and turn off heat works best. If you boil an egg for 20 minutes, you will end up with a tinny-tasting white and yolk that has a black halo. Another thing that i have noticed is the longer it takes to bring the pot of eggs to a boil, the more leathery the membrane inside the shell becomes and the better the chances of sticking to the egg white, thus ripping up the surface. Hope this helps a bit.
