    Flax Panckes/Waffles

    You're better to follow the waffle recipe on http://www.atkins.com and then add a tablespoon (or two) of flax to it. Only 1 carb a waffle. Recipe makes about 8 waffles. I find that you need more water than the recipe calls for...

        They are crispy...

        I use a very cheap white-westinghouse waffle iron from Wal-Mart and it's coated in Teflon so there's no need to use butter, oil or PAM. They come out so crispy and delicious that you would NEVER guess that they are low carb. Yum! Yum! Yum! I had them for breakfast this AM.

          OK.....now you have my attention!!!!! I'm going to crack open my brand new waffle iron and test these babies out!!!!! I LOVE waffles!!!! I'm running to the kitchen right now.......................................

            :::::Sigh........... I have been putting off buying a waffle maker for years. Now I need to put one on my list of 'must haves'

            Especially since my kids love the flax muffins so much (another batch in the oven as I type.... they were BEGGING for them)

            They also love their EGGOS, but I won't waste my money on those empty carbs anymore.

              Is the atkins bake mix considered a frankenfood?
              The recipe on the website considers it appropriate for induction, but my acceptable foods list doesn't show bake mix anywhere as acceptable! They sound good, and something different, but I don't want to do something I shouldn't on induction.

              LOL, and Missy-your cheat free sign makes me cringe! How do you do it? You must have great strength and dedication. I think I'm cheat free about 6 days and will be lucky to make it to 10.......I consider my occasional diet dews a cheat though because they really are....its usually my biggest problem.

                You're right... I think they are a "frankenfood" because of the Atkins bake mix, however, it's the one thing I give in for. Other than that one thing (and I don't eat them every day) I am sticking to the plan like epoxy. :wave

                  Thank you! I just want to stay away from them as much as I can, because I feel like my diet dews occasionally are already more than I should cheat. Although at least I know the recipe is there for one of these cold winter mornings when my willpower won't and I really want something besides flax or eggs. At least they are low in carbs, if I have to have something! Thanks again!

                    I wouldn't think the bake mix is a "frankenfood"; how could it be when it just has soy flour and soy protein isolate as it's main ingredients; both are healthy for you. Just can't eat it while doing induction.

                      I made the waffles and they turned out great!!! If you make them; be sure and add more water until they are like a thick pancake consistency.

                        It's not soy anymore Missy. It's now wheat gluten and CORNSTARCH! The box doesn't indicate if that cornstarch is the low glycemic kind and I think 2Big called them up to ask and they didn't know.

                        So definitely not for Induction, regardless of what Atkins Nutritionals Inc. says.
