  • "Poor People Food"

    Josie's fried eggplant post (http://www.atkinsdietbulletinboard.c...199#post474199) got me thinking.....

    Some ethnic foods and even regional foods were "poor people's foods".

    We have a regional speciality here in southern Maryland called "St. Mary's County Stuffed Ham". It's a corned ham that's slashed to the bone. The slashes are stuffed with a mixture of cabbage, kale, collards, peppers, and other spices. Then the ham is wrapped in cheesecloth, boiled and served cold or room temperature. That dish started off as a "slave" dish---the slaves used the hog's head. Eventually, the head was replaced with a ham and found its way to the main house.

    What kind of "poor people's foods" do you like?

    I absolutely love fried green tomatoes. Now I make them dipped in parmesan instead of flour and I like them even better. The parmesan stays crispy and they're wonderful.

      Things that used to be for us po' folk are now trendy and expensive. Things like Chicken Wings, we used to get them for a few cents a pound, then they started serving them in restaurants and they got trendy..the price shot up, you might as well eat chicken breasts now, they're cheaper and you get more meat. Same thing happened to flank steak, that used to be one of the cheapest cuts of meat, now its more expesive than Ribeye steaks are..so much for that cheap meal.

      My po' folk food now is anything we grow ourselves in our garden or anything we catch out of the sea or a lake/pond! I'd like to get into foraging, but I wouldn't have a clue what was edible! I'd probably die from a poison mushroom!

        yep, I'm a country person...my grandma and mom used to make all kinds of 'poor folks food' when I was growing up. We always had collards, cabbage and other types of greens. Our main source of meat was chicken since we lived on a chicken farm. I still eat and enjoy the least expensive foods. We feel we are really stepping up when we buy asperagus or some of the more expensive foods.

          I just thought of another "poor people's food"---grits/polenta. Not Atkins weight loss phases friendly, but if your CCML is high enough, you could probably add it in moderation.

          I remember a cousin of mine went to a really upscale Italian restaurant and ordered something with polenta. My gosh, was he ticked off when he saw that polenta was just cornmeal mush! For years, he never got over that he paid $40 for a dish of cornmeal mush...lol...

            Eating lobster in a restaurant is expensive. Did you know that, in colonial times, lobsters were so plentiful they were considered trash food? (They were even used as fertilizer)

            They were fed only to prisoners, children and indentured servants. Finally, some servants rebelled and had it put in their contracts that they wouldn’t eat lobster more than three times a week!

              That ham sounds heavenly! I'd imagine it was a way of "stretching" the meat.

              When I was a little kid, only poor people ate catfish. They're the river scum, the junk nobody would have considered buying.(I'm from La) So I cracked up the first time I saw it in a restaurant. I did end up liking the fried catfish, but not enough to try making a low-carb version.

                Yum, bake catfish topped with butter & salt & pepper is a delight to me!

                  ha yea im from louisiana too,,,and your right buying catefish to cook at home was just plain lazy thats the fish you cought when the bass wernt bitting..but it always came on a seafood platter.


                  po boys,,,are poor people food..back in the day iot was older french bread they would stuff with what was left over in the kitchen...not adkins friendly but damn is it good,,,shrimp,,catfish,,oyster,,,sauasage,,,lunchm enat you can make anything into a po-boy,,,,most of the country call it a sub,,but its not the same

                    Ugh - you had to mention Po-Boys.... That hurt. I always got half shrimp half oyster. I think I need to try to fry up some oysters. I think Carbalose would work.

                      I havent' tried it on oysters, but I have fried shrimp and fish both with a mixture of almond flour and parmsean cheese and of course spices. Right tasty!

                        Pinto beans are my favorite "poor food" cooked with salt pork, epazote, salt, pepper in a pressure cooker ...then after eating them whole the first day they are as you know great the next day refried!

                        we ate these a LOT when my kids were little and we really had to because we were pretty poor!!! they still love them!

                            Stuffed pigs' trotters... sounds horrid, tastes divine and still not too expensive over here... at least not until New Year when it's traditional.
