  • Carb count ? Can this be right?

    I am making hot spinach and artichoke dip, served with bread and vegies, for a special event. Here is the recipe:
    1 box chopped spinach (8 g carb-8 g fiber = 0 net)
    2 cans artichoke hearts (15 g carbs - 12 g fiber = 3 net)
    1 cup (4 oz) grated parmesan (4.5 net)
    1 cup mayo (1 net)
    4 oz feta (8 net)
    2 oz cream cheese (1.5 net)
    1/2 envelope Knorr veg soup mix (12 g carbs - 2 g fiber = 10 net)

    I see 28 net carbs for the WHOLE dish, which is at least 8 appetizer servings. These counts are all taken from labels except the parm, which said 0 of course.

    Can this be right??? Please, please, please say yes...
    What is it, a RACE? It's coming off, right????

    Carb count looks right. If you want to cut the carbs, try subbing another cheese for the feta. It'll cut those carbs from 8 to 4. Also don't forget to count the carbs of what you use to dip with. And it sounds delish!!! :eating

      The feta is the best part, it really makes it different. But, I am thinking about keeping out the soup mix and including fresh garlic. That would save a ton, and I'm not sure the soup mix adds much. Thanks for your insight.
      What is it, a RACE? It's coming off, right????
