  • Pinto bean pie question

    Don't worry I'm not going near it but I need a low carb "Southern" pie for the neighborhood picnic dessert table and rasin is out regular pecan is too much sugar alcohol to be friendly for all should some newbie out bid a real low carber for it.


    anybody made one of these low carbed? does Splenda really work like sugar would in this pecan like pie. it is basically mashed pintos, spices,eggs, pecans, and sugar with coconut optional. then baked in a pie shell. since it is 1 cup real sugar per pie would it be 1 cup Spenda? and does Splenda still make the old powdered Splenda for cooking not that new 1/2 sugar stuff? Can I use liquid Splenda in this?I need to know by Saturday well Friday to get it cooled by Sat AM. The money goes for maintnenance on the trail throught the woods behide the subdivision so they need money making stuff and they picked souther pies this yr for the theme.

    Why not do a "sweet potato" pie, made of real sweet potatoes or a combo of sweet potatoes and carrot or pumpkin?

    The Splenda might work. I'm guessing the pinto bean mash is supposed to mimic the soft egg custard in a traditional pecan pie, right? So the bean mash will give the egg custard stability.

    Granular Splenda is supposed to be 1:1 with granulated sugar. So 1 cup sugar should be the equivalent of 1 cup granular/pourable Splenda. I think Splenda still comes in the non-baking form.

    You might want to do a test run of this pie just to make sure it works. Just use half the amount of ingredients.

        Yeah, you'll have to sweeten it, but you probably won't need as much sweetener. In fact, you could use a mix of the low carb pancake or the "sugar-free" pancake syrup and the powdered/liquid sweeteners. The pancake syrup will mimic the brown sugar flavor.

          I love pinto bean pie!...but honestly the only way I have had it is at a Muslim (Halal) fish and chips place in the city ...it was exactly like sweet potato pie with pinto beans instead of sweet potatos and it was sweetened with sugar and it was awesome the crust was perfect the filling to die for but again it was made with sugar ..so if you can make a good low carb sweet potato pie you could just make the same recipe as the that and use beans instead....

            Never had pinto bean pie....but I have eaten sweetened azuki beans and those Chinese moon cakes filled with a sweet bean paste....

              this is the regular recipe. I'm subbing the sugar and might leave out the pecans since I will have pecan crust

              1 c. sugar
              1 tsp. allspice
              1 tsp. cinnamon
              1 tsp. nutmeg
              1 1/2 c. cooked, mashed pinto beans
              1 whole egg, beaten
              2 egg yolks, beaten
              1 tsp. vanilla
              1/2 cup chopped pecans
              1 unbaked 9-inch pie shell (will be using a pecan nut crust here)

                  you are making me want to make one of these tomorrow you know I think I should go buy some pintos on the way to work
                  we used to make "Pinto bean fudge" when the kids were little I can not remember what went into it but am going to look it up it was fudgy and sweet and the kids loved it

                    nope. this recipe is supposed to be like pecan pie.

                    there is a custard pinto bean pie that has basically the same recipe but no pecans and uses milk

                      If that's the recipe, then subbing Splenda for the sugar will be okay.

                      Pinto bean fudge??? That sounds interesting.

                      When I was a youngster, there was a cooking show called "Cooking with Kathy". She was a lacto-ovo, whole foods vegetarian. Anyhow, she seemed to always make a dessert/sweet out of butter, powdered milk, and honey mixed into a paste with nuts, dried fruit and carob chips kneaded into the mix. (What this has to do with pinto bean pie? Nothing, but this topic made me remember some of the more unusual dessert recipes I've come across.)

                          o/t but on the strange recipes..my mom saw a recipe for 'mock apple pie' that used ritz crackers in stead of apples, she was so baffled by this she had to try i tjust to see if it worked. it was awesome and believe it or not...tasted like apple pie!

                          I'd love to make that pinto bean pie, and the fudge actually..it sounds awesome, but i just know i would i would lose complete self control.

                          i haven't baked in a while..it can be too dangerous sometimes!

                            I've heard about the mock apple pie before, never tried it, though...I have eaten a Filipino dessert that's made with shaved ice, cooked kidney beans, corn kernels, coconut preserves and other roots/fruits. It's good and one of these days I'll figure out how to make it lower carb...

                              you could make just one serving since the pie serves 6 you could cut it down by 6 or 8th and do an 1/8 of a t of all the spices and vanilla, 2T sweetner equivilant, 3T mashed beans, and a very small amount of egg as in 1/4 of a yolk and 1/8th of a regualr one. mix it up add some nuts to the bottom of you cup and them megs and Hedie will tell you how long and how to cook it
