Pumpkin Bread – Induction Friendly

  • Pumpkin Bread – Induction Friendly

    1 T butter
    1 T heavy cream
    1 lg egg
    1 pkt splenda
    dash salt
    1/8 t pumpkin pie spice
    1/2 t baking powder
    1/8 t vanilla
    1/2 C Libby's 100% pumpkin
    4 T flax meal
    1 T softened cream cheese

    Melt butter in a microwavable dish. Add heavy cream, egg, salt, pumpkin pie spice, splenda, baking powder and vanilla. Mix until well blended. Add pumpkin. Mix until smooth and blended. Add flax meal. Mix until incorporated. Microwave for 4-5 minutes or until dry and center is set. Turn onto plate and while still hot ice with softened cream cheese.

    Nutritional info - Cal: 565, Fat: 48 g; Net Carb: 9 g (Carb: 22 g, Fiber 13g), Protein: 19 g

    Is that nutritional info per piece or for the whole thing? edit: and if by the piece, how big is a piece?

      The nutritional info for the entire thing. I make it in a 4"x4" microwavable dish and divide it in quarters. Two squares (or half the recipie) makes a nice filling breakfast.

          Perhaps an unexpected question, but how is this recipe (and it looks like a nice one) Induction Friendly?

          Did somebody add Pumpkin to the Induction Foods list? Don't get me wrong, I'm not trying to bug you particularly, but I sure wouldn't want any newbies to be misled into thinking this is ok to have on Induction when it isn't....

                    Mostly, now just the process is unpacking and getting all the utilities/etc hooked up, so, one more week of median time then I should be back full force .

                        How much in weight in 1/2 c Libby's pumpkin? We don't have that product here so I thot of making my own. It it puree? or diced? and in water?

                        I don't have a microwave but have an oven. Can I do this in the oven? If so for how long? Thanks!!
