    This is it, Creamy Cheesey Cauliflower Casserole. I just had it tonight and I might just go over my veggie limit cause it's sooooo darn good.
    Even if you hate veggies I think you'll love this recipe.

    bacon, about 1/2 pound, 8-9 slices (never can have to much bacon) chop it up and cook it until crisp. Set aside some for a topping.

    3 cups of shredded cheddar cheese. (Bag and a half?) can't have to much cheese either.

    1 T chopped fresh parsley

    2 large cauliflower heads, trimmed and cut into florets. (I know it sounds like a lot, but leftovers are great)

    4 oz cream cheese

    1/4 of heavy cream, and 1/4 sour cream/

    Once you have cooked up the bacon, and set aside some for the topping, also set aside about 1/2 cup of the cheese.
    Cook the cauliflower until tender but not mushy, 7 minutes ish. Drain it good and rince with cold water. Roughly chop about half of it.
    Melt the cream cheese in you pan over low heat. Stir in the cream and the rest of the cheese and stir until the cheese starts to melt. Pull if off the heat and stir in sour cream, and the cauliflower and some salt and pepper and transfer the whole thing into a 2 qt baking dish, sprinkle with the topping and bake until brown and bubbly, about 15 minutes in a 350 degree over.

      Sounds wonderful and Im definately going to make it this weekend.... perhaps to go with the potroast Im gonna simmer tomorrow.

            YUM!! I made something like that (it didn't have heavy cream) for Christmas last year for the family meal so I would have a side dish available to me. Everyone ate it up!!! If anyone had ever told me i would eat more cauliflower than any other vegetable, I would have laughed at them!! But ever since trying Barb's roasted cauliflower, I will eat the whole head in a day!!! Leftovers never even make it to the fridge! I do the cauliflower casserole and use 1/3 frozen broccoli in place of some of the cauli for a deluxe stuffed baked potato kinda thing. Or boiled cauli in place of potatos for potato salad during summer family gatherings. *drool* Okay, I am gonna have to roast cauli for breakfast! Starved now!
