No, I just sorta made it as I went.

I browned two red onions, two turnips, and about half a head of cauliflower in some olive oil, then added around two lbs of ground venison, a can of beef stock, a huge load of paprika, some majoram, and kosher salt/cracked black pepper.

Let it all simmer, then served it up with sour cream and horseradish on top.

Nullo what do you do to make the goulash dish?...do you use a sweet paprika to make a gravy?...caraway?....I am not sure about the cauliflower but if it is really fresh....I imagine I could get used to it....do you just cut it up and roast it with oil?

Sage butter, that sounds yummy, I love sage and usually sprinkle it on the skin. What do you do? Just mix the sage w/ the butter and stuff it up under the breast skin?
yup but I bet this is too late you are probably done now!!!

Yes, it certainly does shrink down a lot doesn't it? But man, that stuff is so good it is very easy to eat a whole head without even realizing it.

I can't take credit for this recipe though, there is an 11 page thread on egullet.com about the stuff, it appears to be an obsession over there .

Yep, too late, but I always use butter and rub on the outside of the bird anyway and use alot of poultry seasoning and extra sage plus a few other spices --it came out delicious, next time I think I'll try stuffing it insidet the skin though like you do!

And that roasted cauliflower does look delicous-- I need to try that one too!

Tonight we're having Chili! I put a triple batch of it in the slow cooker before leaving for work this morning! I can't wait - I love cold weather food! I like to top mine w/ shredded cheddar and sour cream!
