I use an Asian brand I buy for like 69 cents a can at my local Asian store. I think it's Vietnamese....can has a picture of an cut coconut on it. There's plenty of cream that rises to the top with that brand. Although I have come across some brands that don't have quite so much cream...they typically are the "lite" formulations (they make it "lite" by adding starch thickners) or they're the American brands.
well i made it and the house smells great. I didn't get an answer on the chicken so I just tossed it in with the egg plant to cook and then added all that to the curry mixture so the chicken may not have been curried right but I liked it. Mother turned up her nose at it.I think almonds might be a harder nut then those cashew cause i had some crunch in it. Now I got to see if it will freeze well cause I got 3 more servings left.
