Jack-o-lantern Pumpkin recipe?

  • Jack-o-lantern Pumpkin recipe?

    This Halloween, I got a rather large pumpkin, but didn't carve it. I'd like to eat it, but it is not the pie-making variety.

    Anyone have suggestions how best to use it, short of just frying it with butter, salt & pepper?

    if it is a true pumpkin and not a gourd your favorite winter sqash recipe would work great.

    I lver to roast them with garlic onions and a bit of EVOO and then puree the stuff when it is cooked.

          OK- I'm assuming this is a true pumpkin, selectively bred for use as a jack-o-lantern, meaning its flesh is only an inch or two thick, and not as rich as a pie pumpkin. I'm thinking there's enough pumpkin even so to give half to Mom, have fried slices for 3-4 meals, and enough leftover to make soup for a week, with onions, peppers, & seasonings. And roasted pumpkin seeds for snacking on.

            you will know real soon if it is a gourd as they are verey stringy. hope you got a nice one. i love pumpkin soup but cheat and use canned for that stuff and save the real ones for oven roasting. My grandmother had her family's recipe for smoking pumpkin pieces but I never liked pumpkin as pumpkin back then.

              I saw a great recipe in Gourmet magazine that layered thin slices of winter squash /91/8 inch thick) with sauteed spinach, topped with cheese and baked.

              Since I didn't have any spinach, I layered the squash slices with sauteed ground beef (cooked with alittle tomato and onion) and cheese. It was a really nice "lasagna"....leftovers wee great too.

                2big & Megs - I think i'll have to tryboth of those ideas - pumpkin lasagna (without the spinach) and roasted, with hickory flavoring. If the pumpkin turns out to be stringey maybe it will be like spaghetti squash? That would be ok, too.

                    Since it will freeze tonight, I think I'll start cutting it up watching a movie, and use the ground beef green tomato stuff (I made last night for lunch today, but will be having for dinner since I had breakfast for lunch) as a base for the lasagna. mmmmm... with mozzarella cheeeeese....

                        The pumpkin was nice - I tossed the bottom to the deer, gave 3 peeled rings to DM to make soup with, had some with ground beef (w/green maters onions etc) and smoked stovetop "baked" top.


                        My DS & I had the most fun with the top - we turned it into a "volcano" that spit steam & broth up the stump of a stem, which resembled a mountain on a dome of orange.
                        Can't say much for flavor, though. It was bland, and I had to smother it in salt & pepper.
