  • Help with rolling Nori (for low carb sushi)

    I tried making low carb sushi this weekend with nori sheets, cream cheese (of course ), smoked salmon. It was a bit of a disaster but edible...my problem is handling the nori sheet!

    I got the idea from Mirna05 (thanks Mirna! ), but I'm a bit of a newbie with nori sheets. Am I supposed to moisten it first? I did, but it didn't seem right.

    The nori sheets are toasted, so I'm not sure I am supposed to roll them as they are. I have a bamboo/wood sushi rolling mat which I haven't used yet.

    Any help is appreciated...thanks!!

    I'm no good at this either. I usually end up making hand rolls. They're not as pretty, but I'm not talented enough to roll them as well as Mirna does.

      Toasted nori is "ready to use". So just take it out from the package and use. If you don't have a rolling mat, you can use paper towels---double layer of them if you use an inexpensive brand.

      Anyhow, put the nori on the paper towel. Put the filling on the 1/3 closest to you. Then lift up the paper towel and roll the nori up. (Make sure you don't roll the paper towel into the nori!)

      Try not to overfill the roll, otherwise, it will be hard to roll and it might burst the nori.

      I don't find it necessary to moisten the nori because the fillings are generally kind of moist and that will help to seal it. However, if the roll doesn't stay closed, just wet your finger with clean water and run it along the inside of the edge. Roll, so the seam side is down, and hold for a few seconds. OR after you finish rolling the nori, continue rolling it into the paper towel and let it sit for a few minutes before serving.

      The other alternative is to cut the nori sheets into quarters (so you have squares). Then you can roll the squares into cornucopia's and fill them.

        I´m glad you tryied them!! It requires a lot of practice to roll them,I am sure next time they come out better, I dont moisten them, the sheets moisten with the cream cheese.

        I put the smoked salmon, cucumber and advocado along the sheet not all at the edge, so it dont be very thick in one side and narrow at the end of rolling.

          Thank you Megs!! That helps a lot...I will need a lot of practice but I'll get the hang of it (eventually )

          It was really funny, I got the nori out on Saturday and couldn't figure out what to do with it. The idea for cutting them into quarters is a good one too, all my fillings got squished when I was cutting them after rolling!

            Thanks for the link Mirna!

            That was something I forgot to get at the store...cucumber! I've had avocado rolls before, they were delicious (before I was on Atkins). I should get some for my next batch!

              Nori is pretty versatile and a pretty good base for low carb h'or deovres (or however you spell it).

              If you want to avoid the rolly thing, make a sandwich using the nori sheets. Layer of nori, thin layer of cream cheese, filling, thin layer cream cheese, nori. Then use a sharp knife to slice them into rectangles, squares, triangles.
