  • sorta low carb fudge

    sorta low carb fudge, use eat an ounce, not sure how many carbs, i substituted the milk and sugar..... it was a tad runny, but good

    1 cup (2 sticks) butter, softened
    8 ounces pasteurized velvetta cheese cubbed
    1 1/2 pounds splenda brown sugar, or regular splenda 5 cups
    1/2 cup unsweetened cocoa
    1/2 cup heavy whipping cream
    2 teaspoons vanilla extract
    2 cups coarsely chopped pecans

    PREPARATION:
    In a large saucepan over medium heat (i use microwave) butter and cheese cubes together, stirring frequently; remove from heat. Sift together sweetner and cocoa; add to cheese, mixing well. Stir in heavy whipping cream, vanilla and nuts. Turn into a 9x9x2-inch pan; chill until firm and cut into squares.

    Velveeta? How does that work in there? What's it supposed to substitute for?

      I'm stuck on the velvetta. I just can't see velveeta and chocolate in the same place...

          Unfortunately, Velveeta is not Atkins friendly. It sounds like an interesting recipie, though.

              Here are the counts I get from MasterCook:

              With granular Splenda:
              Per Batch: 4826 Calories; 440g Fat; 69g Protein; 200g Carbohydrate; 35g Dietary Fiber; 165g Net Carbs
              Per Piece (based on 81 pieces per batch): 60 Calories; 5g Fat; 1g Protein; 2g Carbohydrate; trace Dietary Fiber; 2g Net Carbs

              With Brown Sugar Splenda:
              Per Batch: 7751 Calories; 440g Fat; 69g Protein; 761g Carbohydrate; 35g Dietary Fiber; 726g Net Carbs
              Per Piece (based on 81 pieces per batch): 96 Calories; 5g Fat; 1g Protein; 9g Carbohydrate; trace Dietary Fiber; 8.5g Net Carbs

              You can knock off a few calories and 1g of carbs per piece if you make this with liquid Splenda.

                81 peices from a 9x9 pan would be... microscopic, lol. Not worth bothering for me =)

                  Hey lets cut this girl some slack a recipe is a recipe ....I am not even sure what Velveeta is for ...but I can say ..somethings may sound wierd (people tell me ALL the time my food concoctions are strange) but when you put them all together ...well they can be pretty good in the end.....besides I am thinking Harley looks pretty fantastic!!!

                  also I have to say "Atkins' Friendly" does not exclude any foods that I am aware of if you are in to the the maintaining mode you can eat just about anything your body can handle ..I am evidence of that ..I can eat just about anything with in limits and portion (sugar and white flour the exceptions) to keep my weight down now and appreciate seeing some recipes that include foods that are for people like me too

                    Like I said, I'm just trying to figure out what Velveeta replaces and how it does mixed with cocoa...just doesn't seem right. I'm sure it might taste great, just really curious about the cheese & chocolate! LOL!

                      Never heard of velveeta...but cheese and choc sounds good to me... cream cheese maybe, or ricotta, or mascarpone (yum!).
                      Here in Italy people eat cheese with pears and honey. The Brits eat it with chutney. Cheese can be so versatile!

                        Velveeta Regular
                        Ingredients: MILK, WATER, MILKFAT, WHEY, WHEY PROTEIN CONCENTRATE, SODIUM PHOSPHATE, MILK PROTEIN CONCENTRATE, ALGINATE, SODIUM CITRATE, APOCAROTENAL (COLOR), ANNATTO (COLOR), ENZYMES, CHEESE CULTURE.
                        So it would be fine for anyone past the Dairy rung of OWL.

                        One ounce of velveeta contains about 3 net carbs.

                        I have never eaten it so am not sure what it tastes like, but if it is a fairly mild cheese you could use something like gouda [0.63 carbs per ounce] or edam (dutch cheeses) instead I guess to bring the carb count down or if it is a stronger tasting cheese try a sharp cheddar.

                            I would hardly call Velveeta a cheese, more of a processed cheese spread.

                            Anyway, someone made a good point where that's probably supposed to be cream cheese. HarleyLady, can you confirm and edit if necessary? Thanks!

                              First off. I posted a really nice reply. But the "server was too busy" so I had to rewrite and try again!

                              Anyhow, real fudge is made by boiling sugar into the hard candy stage. Then you add stuff like cream or butter, chocolate, flavor extracts, nuts, etc. The cream or butter softens the sugar base so it develops a texture like a caramel candy.

                              Velveeta has a plasticky texture. Let's face it. If you're a very crafty type person, you could use Velveeta like an edible molding clay and form little bunnies, little fruits, etc. for cute holiday table garnishes.

                              So the Velveeta takes the place of the sugar-caramel base of real fudge.

                              It's sorta of like a "low fat" and inexpensive mock marzipan recipe I read some years ago. It used boiled potatoes that were mashed with powdered sugar and flavored with almond extract.
