    Sally, Velveeta is a processed cheese that has a cheddar-like flavor (well....it tries to taste like cheddar.) It melts smoothly and never gets stringy like a genuine cheese should.

      I recall seeing a recipe one other time that used velveeta as a base for a chocolate-y dessert. I may have to give this one a try.

      AND I have to say...on Atkins (and around here at ADBB) I've learned not to say "ewwwwww" to something before I've tried it myself LOL I frequently make recipes (mock danish) that I would originally have thought "ewwwwwwwwwwwww"

        Thanks Not2Late and ValidRouge! Sounds like a pretty good explanation.

        BTW, I don't think I ever said "ewwww". I was just curious.

        On a side...I've been getting a lot of those frustrating "Server too Busy" messages lately too! I've started actually copying the text I'm posting if it's lengthy before clicking submit.

          oh i know it is processed, high in fat, high in calories...
          and probably bad for you... but it is good, and NO SUGAR, i use equal, i dont like splenda but have used it. it is in my starbucks iced coffee right now... but i only partake in the velvetta fudge in a small amount so it dont mess with me, plus i am on maintience, and it is better than real fudge with real sugar and chocolate..... also i buy the 4 ounce size and downsize the recipie i dont get the huge 3 pound brick.

            this is funny I can not believe I never heard of this stuff I just googled it!!!! LOL ...there are 80 billion recipes for Velveeta I have to look for it and see ....

            but then I thought SPAM was a fish until I went to Hawaii so live and learn!!!

              the velvetta is a substitute for the basic chocolate base use the velevtta intead of chocolate.
              but again i am on maintiance to i am expermenting daily on stuff
              from mecipies i have found or made up..

              i like velvetta, and rotel on my broiled chicken, yummy... on maintience i am adding back carbs to my diet...
              hey you dont have to make it or try it... i put it here for some one who may want to, who may be on maintience. i guess i should look for a maintience forum... sorry for those i may have tempted or angered.... not meaning to do that....

                Harley please keep posting recipes not everyone on the board is on Induction I promise!!!! the point is to move on and not stay there we need to learn and grow ....

                  Yes it it not atkins freindly but i have to add carbs on maintience, not wanting to add sugar or breads or yellow or white or orange veggies, i have to add some carbs because my size 8 are getting baggy and i dont want to go out and buy all new clothes when my goal was a size 28 to 8..
                  i try to add good carbs, i have had all types of cheeses from day one with no problems, i love cream cheese with sweetner and add different favroings... i am having fun on maintience but still loosing.. i would like to loose a few more, but not at the expense of having to buy all new size 6 clothes... i just spend over 1200.00 on all new clothes, suits, sales clothes for next summer, winter clothes, new coat, underware, bras, gap jeans,
                  old navy shirts, marshalls, burlington coat factory.

                    Per Batch: 7751 Calories; 440g Fat; 69g Protein; 761g Carbohydrate; 35g Dietary Fiber; 726g Net Carbs
                    Per Piece (based on 81 pieces per batch): 96 Calories; 5g Fat; 1g Protein; 9g Carbohydrate; trace Dietary Fiber; 8.5g Net Carbs

                    You can knock off a few calories and 1g of carbs per piece if you make this with liquid Splenda.[/QUOTE]

                      why do people think only lower rung and induction foods are "Atkins Friendly"

                      oh well ....

                      I say post recipes if you got em people here are grown ups and can make up their own minds

                      I eat a lot of carbs and can still maintain my weight..and I think even for myself it is about time we have more maintanance recipes here ...

                      but what do I know ...I am an "Admirer"

                        Yes, definitely keep posting recipes!! We love 'em!

                        We weren't dscouraging you or downing the recipe, we just wanted to know about the recipe or wanted a correction if it was a mistake.

                        I haven't used velveeta in a long time, but I use other things like that. OMG, one of my favorite things was a can of chili and velveeta melted together.

                          Actually, depending on your CCML, you could eat real fudge made with sugar during Maintenance Phase. All in moderation of course.

                          Also Harley, if you're still losing weight while doing Maintenance Phase, you're doing the right thing by increasing your carbs. As you learned through your Atkins journey, everyone has their own Carbohydrate Level for Losing weight and their own Carbohydrate Level of Maintaining weight. So if you're on Maintenance and losing, you're simply not eating enough food.

                            what is horrible is that if i eat a baked potato (I did this last week)
                            it tore my stomach up, litterly, i was soooo bloated and cramping and sitting on the pot several times, so i got really scared adding starches back, i had a untollerance to sugars even when i was heavy, hypoglacamic ( not spelled correct) if i eat sugar i get realllllllyyyy sleepy and tired and my blood sugar really droppes low...
                            this also happened when i ate 2 ounces of sweet potato yesterday.... so i am expermenting with carbs....i have been told i am shocking my system with the carbs i have not had for 16 months. so i am in a delema, stay low carbing or running to the restroom and feeling terrible and bloated to the point of my belt being on the 5th knoch to the first within an hour of eating carbs... weird i think, but if it is true, i am really scared..

                                Did you do the OWL steps? That should help you figure out the carbs you can handle and those that don't treat you so well.
