  • what's cooking?

    I am going to the market now and getting the stuff to make this
    ...it is by far the best salmon recipe I have had in freaking ages
    one of my providers at work made this and caught me on the way out with a piece of it to try...omg it is fantastic!!! ..the guy can cook!!!
    he gave me the rundown and I am making it tonight

    take a large salmon filet (frozen is fine but wild caught not farm raised please !!!!)

    the amts here are variable as to how big the piece of salmon is ..

    you want enough of this topping to make about 1/2-3/4 inch thick spread evenly on the top of the filet...

    a bunch of spinach chopped well with a knife

    pesto (make your own! but if you have a store bought one you like I guess it is ok)

    sun dried tomatoes minced well... not much like a couple of tablespoons

    Kosher or sea salt and fresh cracked pepper to taste

    whole pine nuts and just a touch of fresh grated good quality parm

    mix everything up really well then take and put the salmon filet skin side down on an oiled baking sheet ...make sure all the bones are out of it...(I use tiny needle nosed for this) score the meat on the filet about one inch apart

    then just gently press the mixture onto it and bake at 450 for just enough time to it to cook through and the nuts to brown ...15min?

    you guys ...make this ..it is beautiful to look at and tastes unbelievable!!!!

    For dinner tonight... I'll have a large hamburger patty fried and some lettuce with some low carb salad dressing. Induction - day 2!

      I have no idea what Immaking. Ive got two chicken thighs and legs in the fridge, waiting for my inspiration to hit. Creamed spinach sounds yummy to me today though so that will prolly make an appearance

        I cooked some beef short ribs in the crockpot last night. When I get home, I'll heat and eat (along with some carrot-turnip mash.)

          I just got off the phone with my best friend who is doing low fat low cal. She was complaining about her low fat peanut butter on rice cake left her hungry. I didnt tell her I was eating some awesome chicken parm.
          I sauted garlic and chicken tenders in oil added some whole tomamtos and topped with mozz. Yummy

            they taste awful to me and are creating an environmental disaster ..plus they are no better for you than eating hormone fed meat and I dont do that either ....but this is just me being a militant is all

            I support local small business fishermen/woman they are the most environmentally wonderful people I know ..they want to protect what they love to do!!! so I buy locally from small fish companies..

            now if all the cheese in the world would just come from hormone free milk I would be really happy ...I just can not give up cheese ..

                That salmon sounds yummy! I also only use wild caught salmon. I also try to buy most of my food organic. Last night we had boneless pork chops cooked in olive oil, fauxtatoes and a big mixed salad. Tonight I think I am going to roast a chicken greek style. I will buy the ingredients for the salmon tomorrow at the store.

                      but instead of shredded papaya I am using chayote and leaving out the palm sugar (you could go with the splenda if you wanted but I prefer to just not have any sweetener in this dish I think

                        LOL I Have made that meatball a few times and did not realize all the ingredients in the recipe were the sauce!!! LOL today I noticed the 2 cans of coconut milk and was astounded !!! oh well it is a good meatball ..I also add shrimp paste an egg and some minced cilantro and green onion....I can not follow a recipe!!!

                            I'm learning some Indian recipes... here and there. I'd like to have a handful of many types of cuisines in my arsenal eventually.
