    Hi all

    I love the non Atkins version of this but I've tweaked it to make it (hopefully) Induction friendly. Please can everyone let me know if this is Induction friendly?

    1 x 400g can of tomatoes (Heinx chopped tomatoes 3g carbs per 100g)
    2 chicken breasts
    half an onion
    1 clove of garlic
    1/4 pint of chicken stock
    Butter and olive oil for cooking

    Brown the chicken in butter and oil. Remove from heat when done. Fry onions and garlic in remaining butter/oil mixture until golden. Add tomatoes, chicken stock and chicken. Bring to boil and cover and simmer for 20 mins.

    This makes 2 servings.

    So 6g carbs for the tomatoes, I'm not sure on the rest! Please help!

    I think that would be induction friendly. However in my recipe I believe I also use mushrooms and black olives. I also prefer leg and wing pieces in this recipe. Cheaper too. I also include a bay leaf, teaspoon or so of fresh chopped rosemary, and the same amount of chopped fresh sage.

        oh and ps ...I would put some mushrooms and olives in as well they are good for induction! ..then later when you get there add a cup of red wine

        OOOXXX I love this dish and had forgotten about it...

        oh yeah I put a squeeze of lemon juice in mine and oregano ....and basil ...hmmmm that is it

          It's Atkins friendly. What I've found is that the amount of tomato in most dishes can be reduced without significantly affecting the flavor. So play with the tomato amount. If you want the carb count to lower.

              A bit of chili pepper wouldn't come amiss, I don't think.

                Doh!! 4 got the mushrooms!!! My BF hates them so I usually omit them when I make it for both of us.

                Good idea about the chili....I buy 'Very Lazy Red Chillies' from English Provender Company. Chopped up chillies in white wine vinegar. Altho I get the feeling Heidi is gona shout at me and tell me to use fresh ones!

                Might have a play around with the oregano, basil and rosemary. Thanks for the tips!

                    Ye, they do have a slight twang to them tho.

                    Another question! The original recipe calls for the chicken to be coated in flour b4 frying. Would soy flour be a good substitute? Would this small amount for coating chicken be bad for me?

                      Yummy.... it really sounds wonderful, I'll have to try this myself.
