  • What do you put in omelettes?

    Hi,

    I always feel a bit shy starting something off when I'm just a newbie, but here goes.

    What are your favourite omelette fillings? Reason I ask, is that I'm in a rut of only using variations on spinach/ham/mushrooms/cheddar, and good as that is, I'd love some ideas for trying something new.

    My occasional treat omelette is filled with a small handful of frozen blueberries. People always think that's crazy and disgusting, but if you're not grossed out by purple egg, it's incredibly good. Has anyone else tried that?

    hey don't worry about starting new topics :hug newbies are always welcome!

    my favorite is pizza omlets. I take some sausage, onion, green pepper and a bit of pizza sauce and mozzerella cheese! it is really yummy!

      Good question. I'll be curious what others have to say too.

      I actually prefer just cheese -- but I use different types of chees depending on my mood: swiss, cheddar, muenster, or chevre.

      But I like having the omelette with a tablespoon of salsa and sour cream.

        Blueberries in omelettes are good. So are apples. Pre-Atkins I used to make jam omelettes. For a treat I sweetened cream cheese with Splenda and vanilla extract and use that as a filling.

        Anyhow, my some of my omelette fillings

        Nacho: salsa, cheddar cheese, top with sour cream.
        Pizza: mozzarella, a tablespoon pizza sauce, pepperoni, chopped pepper and mushrooms.
        Sausage and green peppers (self explanatory)
        Stilton and walnut
        Sauteed fennel bulb and cream cheese
        Leftover: anything that's in the frig.
        herb and cheese: different fresh herbs with really any type of cheese

          MMMMmmmmmm ... those all sound so good. Love the sound of the pizza ones. And stilton and walnut! I'm practically drooling.

          Actually, now that it's strawberry season, I'll have to try topping with some of those. Maybe with sour cream. Presumably anything that goes with pancakes would work, because without the sugar, pancakes mostly taste eggy.

            Any meat, any cheese! :joy Included on that list is a small portion of Turkey Spam that is fried up first and then added into the omelette along with provolone cheese.

            I also enjoy maple crystals or sugarfree maple syrup, which makes it taste like french toast without the bread. This is esp. good with a sausage patty.

            A little Steel's Hoisin sauce and some chinese veggies (egg foo young!), Carb Options bbq or of course Heinz or Carb Options ketchup also works for me.

              Some of my favorite combos?

              Fresh rosemarey, prosciutto, basil, and mozerrla with a little tomato sauce

              Fresh dill, tomato, onion, and maybe some mild cheese

              Shredded buffalo chicken and blue cheese

              Sagey sausage, strong cheddar, and LC syrup

                I love an egg foo young with Asian veggies and a wasabi ginger soy sauce here is a simple recipe it is kind of a chinese omelet! use this for leftovers you can mix and match veggies and meat


                6 eggs
                1/2 tsp salt
                1 teaspoon dry sherry (if you skip this it will not be as good!)
                fresh cracked pepper
                1/2 cup leftover anything like pork, chicken, shrimp, crab
                1/2 cup thin sliced celery
                1/2 cup sliced mushrooms
                1/4 cup either bamboo shoots or water chestnuts
                1/4 cup thinly sliced green onion
                3 tablespoons oil
                beat the eggs with the salt, sherry, and pepper. Add the meat, celery, shoots mushrooms, bean sprouts, and onion and mix well.
                Heat the oil in a nonstick wok or stir-fry pan over medium-high heat until the oil is not smoking. Add the egg mixture to the hot oil. Let the eggs sit without stirring until the bottom is slightly set but the top is still runny. With a spatula, turn sections of the eggs over. Continue turning the eggs until the mixture is set on both sides. Remove to a serving platter. Serve immediately

                you can top with soy sauce mixed with ginger and wasabi if you like

                  I make them all sorts of ways but my absolute fav is

                  cream cheese, crab meat, baby shrimp and spinach

                  also like
                  mushroom, cheese
                  ham and cheese
                  bacon and cheese

                  or
                  tomato (romas's sliced thin) onion, green pepper and cheese

                      I don't eat eggs (never have, never will)...but I do make a mean omelette for DH! His favorite is a Philly Cheesesteak omelette! I cook up Steak'ums (100% beef, zero carbs, tons of fat!) with a small amount of chopped onions and green peppers. When the meat is cooked through, I add about 1/2 ounce of cream cheese, stirring until it melts all over the meat, then add 1/4 cup grated cheddar or provolone or any cheese, salt & pepper to taste. Take that out of the pan, wipe the pan out, cook up your eggs for the omelette, and use the cheese steak for the filling. DH would eat these every night if I made them!

                          I had fresh smoked salmon with water chestnuts in an omelet last night!!!

                          how good are you guys at making omelets?...I mean a real fluffy gently rolled evenly cooked smooth creamy French omelet?...I am not great but can do it...my dh however can not make toast but can make a perfect omelet he just has the temp the pan the amt of everything down and then timing is perfect he fluffs and rolls it ...would make Julia or Jaques proud!!!.....it is like eating a wonderful eggy cloud...I just love eggies!!!

                            Hey, I don't bother trying to do mine in that style anymore. I just whisk some cream with the eggs, give me enough fluff, and dump it all into a super hot pan, in go the fillings, fold it over as soon as it is tough enough to take it, brown on both sides, and serve. Not the french ideal, but just as tasty to me.

                              They are 100% beef, no fillers, 0 carbs -- I eat them -- just not with eggs
