  • TGIF what is for dinner?

    ok really it is my Sunday and that makes tomorrow my Monday but for most of you it is actually your Friday and since Fridays are the end of the week and time to relax...

    what is the plan for dinner tonight? anything exciting?

    personally I plan to let it evolve from my shopping later ..I am going this HUGE Eastern European Market ...I found recently ..right under my nose!!! ...to start and then see what comes next ....

    do you guys have any Eastern European culinary ideas to share? it is not really familiar to me at all

    Eastern European? What about a nice Beef Stroganoff? I think it was on the Frugal Gourmet where I saw it first cooked nicely: thin sliced beef sauteed, sliced onions sauteed, sliced mushrooms sauteed---each was arranged in separate piles on a platter. The way you ate it was that you took whatever amounts of each you wanted and mixed it with sour cream on your plate, and the noodles were buttered as served on the side.

    When I finally got a place of my own (and began eating meat again) I tried it that way. It was very good. I still make Stroganoff like that--and it tastes even better because I'm not using low fat or no fat sour cream!

      Oops, forgot to tell you what my dinner tonight is: turkey cakes. I have some leftover roast turkey breast (the real stuff, not the deli version). I make them like you would crab cakes, but I use turkey in place of the crab. Chicken works well like this too. See, I don't mind leftovers, but I like to break the monotony by making something 'new' from those leftovers.

        Hrmmm...well I know a bit about Polish food. If you're adventurous, you could make czarnina or kiszka...well you could make the czarnina and probably buy kiszka. I'm not a fan of either, but my relatives certainly are. Placki and pierogies are probably out, since they're made with potatoes and flour (and other stuff) and are pretty high-carb.

          Oh yeah, I forgot to tell what dinner was...

          Hopefully grilled chicken, cauliflower foob (long story), green beans.

            I have a beautiful filet of cod that i got from fresh market last night. I'm not sure how I'm going to cook it, but I'm sooooo looking forward to it. I told DH since he always wrinkles his nose when I want fish....that he's on his own tonight for dinner....I'M having fish

            Any suggestions on how to prepare?

            Oh, I bought some organic Daikon, I think I might make Daikon au gratin as my side.

              take the cod ...roll it in lemony mayo and sprinkle some crushed hazelnuts on top ..salt and pepper ... bake it ...freaking awesome!!!!

                  I dont like turkey but this would be great with chicken ..and a little chile and curry added ....hmmmmm my mind is buzzing now

                    czarnina=duck blood soup, usually sweetened with fruit syrup/sugar and vinegar. BUT you could use fruits as a sweetener instead.

                    kiszka=blood sausage, much like black pudding, but the Polish equivalent.

                    placki=potato pancakes

                    peirogi=dumplings filled with potatoes, onions, cheese, eaten with sour cream.

                    Polish food takes a bit of getting used to.

                      Look for caviar at that market, Heidi! If buckwheat doesn't bother you, blini's with caviar, sour cream and chopped onion are great!

                      I guess you can lump Hungary into Eastern Europe, so look around for paprika.

                      Then there's borscht, etc. Alot of American Jewish food is similar to Eastern European food because many of the Eastern European Jews settled here.

                            Julie--I gotta know about the cauliflower foob! My dad's side is Polish, so I'm very familiar with those other food items.

                            Tonight's meal is pulled pork. DH can have BBQ sauce, so he's whipping something up. I'm gonna have mine with a ginger-garlic-lime vinaigrette.

                              I took ground turkey and mixed in an egg, some parmesan cheese (from the can), basil, thyme, and minced garlic. I baked it in the oven at 300 for 20 minutes, then took it out, drained off the fat, and put some pizza sauce (I found a store generic brand that has no sugar, flour, or filler crap added) and mozzarella and lots of mushrooms on it and put it back in the oven for 10 minutes to melt the cheese.... basically making the old recipe everybody has been doing since the dawn of time -- I guess they call it the "Meatza" (which sounds like some kind of monster to me), except with the spices in it and using ground turkey (I think it has so much more flavor than ground beef and is so much cheaper), it is more delicious, in my opinion.

                              My husband was skeptical (as it did not sound appetizing to him when I brought up the idea), but he loved it. It was reeeeaaaallly good.
                              No stats. Not weighing anymore ever. Will post "before and after" pictures when I want to. The end.
