    Sadie, that sounds soooooo good! I'm going to have to try that one.

    One of my favorite salads is tomato, onion, and cucumbers with a bit of Italian dressing or vinegar/oil salt & pepper. Sometimes I add a bit of moz cheese (sliced or cubed). Bean salad made with green beans/wax beans (much like a 3 bean salad). I absolutely LOVE Linda's broccoli salad, and my company always goes crazy over it, they don't even know its low carb. My sister loves sunomono (Japanese cucumber salad). Some people add radish, Daikon, seaweed, shrimp, or crabmeat to the cucumbers. A little soy, vinegar, splenda, and salt.

    I'm going to take a look in some of my cookbooks, I know there are more I make I just cant think of them ATM LOL.

      mmmm so many good ideas... For the last 3 months or so, I've come to greatly prefer my salads without lettuce. Everyone in my life thinks I'm insane because of this -- it's nice to see that if I am insane that at least I have company!!!
      No stats. Not weighing anymore ever. Will post "before and after" pictures when I want to. The end.

        lol, a salad just means a mixture of ingredients. In really old cookbooks, there are references to a 'green salad'---the kind made with lettuce. But non-lettuce salads, like coleslaw, Waldorf salad, carrot salad, etc. were also called 'salads'. For some reason, people associate salad with lettuce nowadays---tells you how much influence restaurants have had I guess...

          I also love buying the brocolli slaw that comes in teh bags...I'm not a big brocolli fan, but this is one way i will eat it. helps me get my veggies in. It goes wonderful with both creamy dressings and vinegar based ones. I once had it with an oriental type dressing, it was faboulous.

            Another non-lettuce salad, this one contains tuna, but grilled chicken or steak can be substituted

              Ive eaten this since i was a kid and LOVE it.

              cauliflower salad-
              cauliflower pieces (raw)
              black olive slices
              green onion, chopped
              celery, sliced fine
              mayo

              little salt and pepper and Im a happy girl!

              Myother favorite is fresh tomatoes (not the garbage available this time of year!) sliced, couple slices of onion. sea salt, pepper. occasionally I add in cucumber slices and top with a dash of vinegar. so fresh tasting.

                  Later phase: Green pea salad. Frozen green peas (Thawed) with mayo, red onion, red bell, and cucumbers.

                      Yummy! My mother in law just came to visit and asked me to make it for her again. You see it alot at the deli counter too, sometimes it has raisins in it or sunflower seeds as well. I like to add a bit of red onion to mine and I use enough dressing to coat not swim. I also think it tastes better after it sits for about an hour in the fridge.

                        There are so many amazing ideas here! Lordy lordy I am getting hungry. Does anyone have any tips on how to slice tomatos without them getting all yucky and squishy? Mine never come out looking very pretty.

                            Use a sharp knife. The skin of the tomato is tough, in comparison with the flesh. So if the knife is dull, you'll end up applying too much pressure to slice through the tougher skin, causing the tomato to squish.
