This is such an awesome low carb sauce I make it all the time ..and like to make it fresh each time I need it ..because it just looses flavor in the fridg ...so make it before you start to cook (it is best when it sits for at least an hour) put it in a jar or something and leave it out ..then serve it at room temp poured over grilled/broiled chicken or fish or really whatever you like
Chimichiri Sauce
2 cups of coarse chopped Italian parsley
6 fat cloves of garlic smashed
4 jalapenos (or any fresh hot pepper I love to use habaneros myself! if you do not like hot..and I can not even imagine that ..you can use a sweet red pepper instead....I GUESSSSS

1/2 cup vinegar (white is good for this)
About 1 tsp Kosher salt
About 1 tsp fresh cracked pepper
1/3 cup olive oil
Put into a food processor for just a few pulses to make sure it is all mixed but not pureed
