    This is such an awesome low carb sauce I make it all the time ..and like to make it fresh each time I need it ..because it just looses flavor in the fridg ...so make it before you start to cook (it is best when it sits for at least an hour) put it in a jar or something and leave it out ..then serve it at room temp poured over grilled/broiled chicken or fish or really whatever you like

    Chimichiri Sauce

    2 cups of coarse chopped Italian parsley
    6 fat cloves of garlic smashed
    4 jalapenos (or any fresh hot pepper I love to use habaneros myself! if you do not like hot..and I can not even imagine that ..you can use a sweet red pepper instead....I GUESSSSS )
    1/2 cup vinegar (white is good for this)
    About 1 tsp Kosher salt
    About 1 tsp fresh cracked pepper
    1/3 cup olive oil
    Put into a food processor for just a few pulses to make sure it is all mixed but not pureed

    Hey that's my recipe! OK it's not but it's very similiar to the recipe I stole from my sister only we add less oil and about a cup of vinegar and use it as a salad dressing.

      Isn't it fantastic Grant!!! have you tried it on fish? it is really good on grilled wild salmon!!!

        We don't cook much fish at home but I bet that would be very good. I've used it on chicken before that and that always goes over well too.

            On the other hand I EAT a lot of fish. We eat out quite a bit and I get fish alll the time. I'm not sure why we don't eat more of it at home, it's simple, it's relatively quick and it's tasty, we just have gotten more into the habit of chicken/beef.

              i leave the oil out and mix it with cream cheese for an excellent dip
