  • so what is for dinner tonight????

    It has been a while for this thread ....
    we are probably eating the leftover chicken (I am surprised we saved some but moderation in eating is always a good thing!) that was rolled in blue cheese and almonds ...I need a veggie to go with ...hmmmm will have to stop at the produce stand but maybe just some green beans steamed with butter!....

    We are having fried fish--fish we caught on our last fishing trip and froze. Salad and broccoli with cheese. Of course I have to have my tartar sauce made with capers and mayo! yummy

      I've been hooked on fresh green beans lately.... I steam them but keep them al dente, then put them in a pan with some butter, fry them until they just have a hint of brown here and there, and then add a tablespoon of lime juice and some salt. YUM. That made my mouth water LOL

      I think I'm going to try your blue cheese/almond chicken for dinner tonight! I *love* blue cheese and it sounds SO good!

        Green bean and hamburger casserole from Linda's Low Carb, salad. Also making zuchinni nut bread but not going to eat until tomorrow.
        What is it, a RACE? It's coming off, right????

            This one calls for a cup of oil, mine called for 1/2 cup. I'll let you know how the consistency is. Also, I wanted to try the synergy thing so I used:

            3/4 gran Splenda
            1/8 tsp gran Stevia
            9 squirts saccharin

            It's in the oven, I'll post again tomorrow

              I did a variation on the whooshie pie last night.

              I found the cream cheese to be just too overwhelmingly rich, so this time I put the bottom 'crust' in the pie plate, sauteed up some red and green peppers, onions and mushrooms then added a bit of tomato sauce and italian seasoning. I sprinkled the crust with mozza and parmesan, then the veggies, then another layer of cheeses. Put the top crust on, sealed it and then drizzled with a bit of tomato sauce and parmesan.

              It was good! It still needs tweaking, but we enjoyed it and found it really filling.

              I am still constantly amazed at how little it takes to fill me up now. Pre-Atkins I would easily have eaten two chunks of it. Last night I had one piece (I cut the pie into six pieces) and then had a bunch of cucumber slices with ranch dressing on the side.

                  Good, but needs some tweaking. First of all, use 1 cup oil as this link said.

                  Second, remember if you want to try the synergy thing, the POINT is to use less, and what I used was equivelant. I am goin to try again with 1/2 cup gran SPlenda, 1/8 tsp Stevia and 5 squirts sacchrain. This one was digustingly sweet.

                  Also needs more cinnamon and maybe some clove?

                  Also cook just until light brown, the edges get way overdone if you cook until really brown on top.

                  A keeper though, it definitely fixed my baked good "craving", and it's rich and sweet enough to stop at a slice or 2. I baked in mini loaves and it made 3. The whole recipe is 70 net carbs, so each 1/6 loaf slice was about 4, and really fit the bill.

                      My dinner will be almost like yours tonite Joan, except We're having fried pork chops (breaded with spicy pork rinds) green beans steamed w/ bacon and a small salad!

                            Well, I have a bag of fennel seed that has been sitting around staring at me lately, so I figured I would make Italian sausage, but then my roomate had baked zitti the other night from a local Italian delivery place, and that looked and smelled so good that I figured I would just incorporate the sausage into some sort of baked psuedo-pasta dish.

                              Even better w/ homemade sausage! I love eggplant lasagna, only problem is my BF wont' eat it so I end up having to make a batch of "real" lasagna and a batch of eggplant--too much trouble!
