    Tonight I smushed some chicken breasts around in some mayo then rolled them in crushed pork rinds mixed up with parsley, garlic salt and pepper. While those were baking I cleaned up some baby brussel sprouts and steamed them.


    I just realized that if I told non-Atkins friends about this meal they'd probably hurl...lol...but bf and I really enjoyed it!

      Persian food!!!..I found four middle eastern markets today that had so many beautiful foods!!!...so I am doing this for my folks.....grilled eggplant. pickled eggplant with walnuts... unbelievable vine ripened roasted tomatoes.....stuffed grape leaves ..kibbah....feta ....fresh mint and cilantro ..olives..hummus...lettuce and tomatoes spread on a great big platter ..platter with pitas and romaine leaves (I use the romaine leaves as a wrap instead of pitas)..cucumber and rosewater ice for dessert!!!...... ....I am so sneaky when I am on vacation I cook for folks so I get to eat my diet and what I like,,with out being obnoxious about what I can and can not eat!!!...not to mention I get to try foods from the local ethnic markets....it is fun to watch my father sneak in and snag bites off the platters as I prepare it.....he is going to be full by dinner....hmmmm role reversal here!!!!...btw I am in South Florida visiting my folks ...freezing here!!!

        I always meet my husband for dinner at the restaurant where he works, in between his 12-8 shift as a waiter and his 9-2am shift as the manager, so I pretty much have my pick off the menu, and some things that aren't on the menu.

        Tonight I think I'll be having Pollo con Crema - chicken and mushrooms smothered in a sauce made of cheese and cream.

          My wife has some Gumbo (low carb of course) waiting for me in the crockpot when I get home from work. I can't wait. I haven't had any in awhile and am looking forward to a nice big bowl and a glass of wine.

            That sounds wonderful. I dated a Persian girl for a period of time... the food was always excellent Now you are making me reminisce, about the meal aspect at least lol.

              Nurselady, that sounds SO good!

              We had a super dinner tonight too, we had a romantic (well, too me anyway, I think Hubby was still watching TV LOL) fondue dinner w/rbeye steak w/horseradish dip; chunks of broc, cauli, ham and sourdough bread to dip in Swiss cheese fondue; Banana, kiwi and angel food cake to dip in chocolate fondue. The chocolate will be given away tomorrow, toooo good to have in the fridge!
              What is it, a RACE? It's coming off, right????

                  I am playing around with LC pizza crust recipes now. Last week's was based pretty closely on the roll recipe, and got way too soggy with toppings added. Tonight's I subbed 0-carb baking mix for the flax meal and upped the fiber, and I think made it a bit too dense in the process, however, it stayed crispier and held up to the toppings well.

                  I think the next version will sub a little flax for some of the bake mix, and reduce the gluten a bit to try to make it a little more workable.

                  Anyway, I made a psuedo-Greek pizza: tomato sauce, roasted eggplant, ground lamb meatballs, feta cheese, and lots of oregano.

                    Last night was fresh lobster we caught that afternoon (spiny not those red big clawed yankee ones :tounge ) brushed with garlic/butter while grilling and then with melted butter for dippin and a big huge helping of asparugus with butter. YUMMM

                    Tonight I have to work the 2nd job (bartending) so the honey is going to bring me dinner. I think its going to be grilled wahoo. Unfort, I doubt I'll have any veggi at dinner since I'm working, but I will try and eat a big helping at lunch to help balance it out.

                      Hi msNicksmom would you mind sharing your fondue dip recipes? i got a fondue pot for xmas last year and have yet to use it! i'm having hte ppl that bought the pot, up to the cottage with us for new years and would love to make a fondue! i think there's normally flour in the cheese sauces?

                        MY FAVORITE Curry chicken ....Caribbean style!!!....it is done now....and I am coming home tomorrow...so sad....I wish I could stay here and cook in my mothers remarkable kitchen for another week!!!....

                            ok I can tell you what goes in it but there is no a recipe you just kind of toss in the amts you like of everything!.. ...when my folks lived in the Islands we made this all the time now it is "comfort food" for me....easy to make you take a huge roasting pan and dump in some oil and toss a cut up chicken in it with lots of chopped garlic, onions, bell peppers, 1-2 scotch bonnets (or habeneros) diced up, grated ginger, a really good Jamaican style curry powder that is made just with the spices and no salt or fillers...(I use BetaPac)...but there are several good ones...perhaps at a West Indian market if you have one?....then some cumin and a can of coconut milk..(if you are not at the point of being able to add coconut milk then you can skip it completely I have made it many times with out and it is good!)..then I add couple of cut up seeded tomatoes. salt and pepper..and a couple of Sofrito Cubes (check label for added sugar)..toss everything to coat well ..cover with heavy duty foil and bake at about 400 for 20 min covered then uncover stir up the chicken well, crank the oven up to 450 and cook again for another 20 min or longer until the sauce is thick and the chicken has browned a bit....it is wonderful served with a sliced firm to greenish mango and cilantro dressed with lime....for those who are eating fruit now...if not I make a jicama salad with lime ...
                            this is home cookin at my house!!!!....

                              nullo, I make a great pizza crust using a 2:1 ratio of soy flour and flax. and using beer for the liquid (when I have a few carbs to spare) It comes out really tasty!

                                Oh yeah? that sounds interesting pammie. I am generally not happy with how heavy soy flour seems to come out in baking. I have gotten a couple recipes that come really close in texture, but aren't perfect, and the taste is still off.

                                I have a box of CarbQuick coming, so, that combined with WPI, Oat Fiber, Flax, and whatever else I have laying around might yield something pretty good, at least I'm hoping.
