    Today, I'm doing something different. I have a lot of leftovers: a few cooked pork chops, a grilled chicken breast, some leftover roast beef. So last night, I chopped them all up. Added a chopped onion and half a leftover tomato. Threw it into the crockpot with a bit of cumin and two dried ancho chilis (I ground them into a powder using my coffee grinder.) I set the crockpot on low and let it cook through the night. This morning all the meat was in shreds and it smelled like that barbeque pulled pork. So that's what's waiting for me when I get home.

    If it's good, I'll post exactly what I did.

      Today is my first day and this morning I had Linda's Ham and Cheese Quiche which was good. I grilled a bunch last night so I am thinking I will have a grilled meat and veggie for lunch, but I also have some boiled chicken I need to use up. Does anyone have an induction friendly favorite chicken casserole?

              The leftover thing was good. I'll post the recipe in my blog.

              Tonight for dinner, I'm going to try a recipe I read in this month's issue of Gourmet Magazine. It's "Cucumber noodles": basically you julienne a cucumber into noodles, blanch them in salted boiling water for a minute, then sauce them with butter, lemon rind and some other stuff. Meat-wise, I'm having beef stew.

                Megs, I do that with zucchini all the time. It's definitely yummy with the zucchini.

                I think I'll be having spinach salad with chicken breast tonight. Nothing too fancy.

                  The cucumber noodles were good! I do it with zucchini too, but I never thought of using cucumber. Anyhow, another noodly veggie to add to the Atkins recipe file.

                    Tonight I made a Taco Salad and it was soooo good. I went to use a pack of seasoning for the meat and saw the carb count was 18 I remembered seeing one of Lindas Taco seasoning recipes on here so I searched for it, and made it!!! It was delish. When it was cooked I put the meat in a bowl, added some cheddar cheese, romain lettuce and a 1/4 tomato. I also put a teaspoon of Italian dressing over the top. I use to make it before with tons of dressing and FRITO CHIPS on the bottom I didn't miss them at all

                      Made some yummy stuffed cube steaks - used a paste of cream cheese, blue cheese, grated parmesean and powdered SF pesto mix. Smeared 1-2 TBS of the cheese on the steak and rolled it up.... covered it with gravy and baked....mmmmm

                      served with fresh green beans cooked with some fat back. (nectar of the gods, I tell you!)

                          Funny when I started this thread it was march 1st and i said it was cold and snowy here and i needed comfort food. April 5th and it's once again cold and snowy here!


                          We're going away for the easter weekend tomorrow, so i've got lots of shopping and packing to do. so it'll be a quick dinner tonight, maybe an omlette for me, pizza for my hubby and his daughter.
