  • Shiitake Mushrooms

    I bought a bag of these at an asian market recently. They're dried. Any ideas on what to do with them? Lately, I've been soaking them in water to rehydrate, and then slicing them thinly and tossing with tamari, ginger, hot pepper oil and sesame oil, and eating them wrapped in Nori sheets.

    Any other ideas? If you've ever had shiitake, especially dried, you'll know they have a very strong flavor.

    I sometimes like the sweet vs savory taste in a dish. Could you mix them with strawberries? (on the correct rung of course)

    I have since re-gained a bit of weight, but that is soon to be coming off again!

        I combine them with regular button mushrooms for things like mushroom soup or even omelettes/stuffings. Or I put them into stews---their texture holds up during the slow cooking process.

          The British do not smoke peppermint leaves....tea leaves maybe, but not peppermint leaves.

              Have you considered ginger? Or maybe even pink grapefruit?

                  There's so much you can do with these mushrooms!! I even save the stems in the freezer to use in stocks for a later date! The dried ones are a lot stronger than fresh, but the good thing about that is you don't have to use as much in a recipe to get the same amount of flavor and they last a long time in the cupboard. Basically, you can use them anywhere you would use regular button mushrooms in your cooking. I especially like them sauted with some butter and poured over a good steak.

                    I really love dried shrooms. so easy to use!

                    I like to add some boiling water to them to get them to reconstitute. (save that water though, run it through a coffee filter to get the sand out of the water. I use the remaining water as a base for soups, stews and even sauces for steak. add a little cream and its delish!).

                    I use the shrooms themselves for sauces, (with a little cream its awesome over steak), nearly any soup or stew, pork or beef roast.
