  • Scotch Eggs?

    Watching shows on BBC America and they're talking about Scotch Eggs. I looked them up, and aside from the breadcrumbs they look atkins-friendly.

    For some reason, even though the pubs that fancy themselves English or Irish here sell fish and chips, they don't sell scotch eggs so I've never tried them...

    Does anyone have a recipe or any information about how they taste? I'm fascinated.

    Scotch Eggs

    So fattening but so good! This recipe makes 6 Scotch eggs.

    6 hard-cooked eggs, well chilled
    1 pound breakfast sausage
    1/2 cup flour (Probably could sub some low-carb ingredient here: paging Mr. Kent! Please pick up the courtesy phone!)
    2 eggs, beaten
    3/4 cup fine bread crumbs (Dittos here...)

    Vegetable oil for frying Peel eggs and set aside. Divide sausage into 6 portions. Roll each egg in flour and with hands press a portion of the sausage around each egg.
    Dip sausage-wrapped eggs into beaten eggs and roll in bread crumbs. Heat vegetable oil to 350 degrees Fahrenheit.

    Cook each egg in oil about 4-5 minutes or until sausage is cooked and browned. Drain on paper toweling. Serve warm.

      Here is a slightly modified recipe for low carb:

      Ingredients:
      • 1 pound lean ground turkey or pork
      • 1/4 cup Carbquik Bake Mix
      • 1/4 cup finely crushed pork rinds
      • 8 hard-cooked eggs
      • 1/3 cup low carb bread crumbs (as finely crumbed as possible) *
      • 1 egg, beaten
      Preheat oven to 375°F.

      Divide ground turkey or pork into 8 (2-ounce) portions. In a small bowl, mix Atkins Mix (or one of the flours listed above) with the finely crushed pork rinds. Blend thoroughly.

      On a large flat surface (clean counter top, cook surface, etc.) sprinkle the pork rinds mixture. On this crumb-sprinkled surface, pat out each portion of turkey or pork to about 1/8-inch thickness. Wrap completely around 1 of the hard-cooked eggs, pressing edges together to seal. Repeat with remaining meat and hard-cooked eggs. Roll turkey/pork-coated eggs in low carb bread crumbs and dip in beaten egg.

      Place on baking sheet sprayed with PAM) and bake in preheated 375°F oven until lightly browned, about 20 minutes. Serve and enjoy! You might like a great Hollandaise Sauce with this!
      This is obviously not an every day meal and one for PM or Maintenance phase with the bread crumbs. Could really crushed pork rinds be substituted for the bread crumbs to make it more acceptable? Perhaps. I am not a big egg fan, so I am not sure how the flavors would mesh. The Carbquik has my blessing for those who have evaluated it to their diet even during OWL.

        I make Scotch eggs frequently. I don't bread them with anything--not even a nut flour. By the way, if you use sausage meat,mix it with some regular ground meat. Sausage meat is very high in fat so it will 'shrink' a lot when it cooks, which might produce holes in the meat layer. Mixing it with regular ground meat will give the eggs flavor without the shrinkage.

          sounds pretty good - thanks guys! There is someone who lives in my house who LOVES hard boiled eggs and deep fried things (but then, who doesn't love deep fried things?).

            Wow! I never thought of Scotch Eggs! Thanks for the reminder. I wonder if you could bread with almond flour mixed with parmesan...

              When I make them, I quarter the eggs---easier frying, easier storaging and easier eating.

                I make about 100 scotch eggs every week at work!! sick of them.

                we use a fantastic sausage meat wrapped around the hard boiled egg, then roll in beaten egg, then lightly rol in wholemeal low GI bread crumbs and deep fry. - Make sure you use a yummy sausage meat - and watch out for sugar and cereal being added to sausage meat - they do try to sneak it in.
