Soem of you are familiar with the oatmeal based "no baked cookies". I learned to make them in home economics back in junior high and we called them "raggedy robins" or "fudgies" .
Anyhow, here's general, regular carb recipe for them...
Of course the sugar can be substituted with one of the sugar substitutes and the milk with cream.
What would happen if I sub unsweetened flaked coconut for all or part of the oats?

No bake cookies
2 cups granulated sugar
1/2 cup evaporated milk
2 tablespoons cocoa
4 tablespoons peanut butter
1 teaspoon vanilla extract
2 1/2 cups quick-cooking oats
Combine sugar, milk, cocoa, and peanut butter in a medium saucepan. Bring to a boil over medium heat, stirring constantly; boil for 1 minute. Remove from heat; stir in vanilla. Add oatmeal and stir to blend thoroughly.
Drop by teaspoonfuls onto waxed paper.
