    I came accross this recipe recently...i happened to have a ripe avocado on hand today so thought I'd try to make a low carb version of it.



    Original recipe:




    Ingredients:

    1 medium avocado
    1/4 cup condensed milk
    1 - 2 tablespoons sugar (to taste)
    1 cup ice


    Directions: Throw everything in a blender and process until consistency is smooth. Serves







    I put 1 ripe peeled pitted avocado, about 1 oz of whipping cream, 1 cup of water (i had no choice, the motor in my blender was starting to smell like it was burning-- i can't even imagine howt thick this would be with only a 1/4 cup of condensed milk), a handful of ice cubes and sweetened with stevia and a bit of french vanilla davincis.

    All I can say is WOW!!! It came out like a thick mousse/pudding (you need a spoon to eat it!). it's so rich I couldn't even eat half of it. I've put the other half in the freezer for a bit to see if it comes out ice cream-like.

    I'm thinking there could be a million variations on this too..berries, different extracts like banana, coconut etc.

    I think I have a new favourite recipe....

    And do you know how healthy and good for you avocado is. Unfortunately its also way above my budget

      That's too bad they're pricey there Lynn, I find them pretty reasonable here (and they certainly don't grow here so I guess that's surprising! ) they go on 2/.99 sometimes or .75 each.

      I just made this again this morning, i made a batch with 1 avocado, 1.25 ozs heavy cream, 5 ice cubes and 1/2 cup of almond milk (you could use soy or just water). I didn't sweeten it as i want to divide it up and make different flavours. You could use more or less liquid depending on how thick/thin you want it. My blender is a little cheap smoothie blender so it needed the liquid. it's definately still thick enough you need to eat it with a spoon though!

      The first one i made, i used 1/3 of the shake, added a few drops of banana extract and stevia to tasted. It was awesome!

        sadie i LOVE avocados but this weekend they were about $2 here!!! yikes!

          wow don't they grow there ? I can get a bag of 7 really large ones here at costco for 4.99..that's amazing considering how far they had to come to get here!

            I thought they came from California??? I haven't priced them here in Houston lately but I'll start keeping an eye out for a sale. I know they'll have them cheap for Cinco de Mayo but that's about a month or so away.

              i KNOW!!! i should get them for dirt cheap! right now the store has them ON SALE for $1 each.....that is as low as i ever see them....lately anyway...you would not believe the way food prices are sky rocketing here in CA...and we grow most of this stuff here! go figure!

                They're pricey here too. Usually 1.50 each; a buck a piece if you can find them on sale.

                  Think they are about 1.39 at Walmart right now, I am not buying as often as I used to when they .87. I used to buy one and split it between two people to eat topped with sourcream, now when I buy one I dice it up small to throw in with our salads to make it go further.

                  But that shake does sound good!

                      Wow, I just saw this thread...thanks for the recipe, Sadie! I LOVE avocados, and can't wait to try this!

                      Avocados are usually $1 each here, sometimes a bit cheaper sometimes a bit more expensive. But I think it's worth it--they're healthy, and I love them!

                        Julie I think they're worth the $$ too. There only around a dollar here usually.

                        this is so good I've honestly been making it every other day...I can only eat half..it's so rich! I've been having it every day with breakfast. I've found adding a bit of psyllium keeps it thick when you store it in the fridge..because it's got ice cubes in it the ice does melt a bit and thins it a little, so this helps. It's still awesome though and tastes just as good the next day!! You could probably do it without the ice or a bit less ..

                        My favourite flavour right now is with banana extract, sweetener and a bit of vanilla davincis, tastes to me like banana pudding!
