I came accross this recipe recently...i happened to have a ripe avocado on hand today so thought I'd try to make a low carb version of it.
Original recipe:
Ingredients:
1 medium avocado
1/4 cup condensed milk
1 - 2 tablespoons sugar (to taste)
1 cup ice
Directions: Throw everything in a blender and process until consistency is smooth. Serves
I put 1 ripe peeled pitted avocado, about 1 oz of whipping cream, 1 cup of water (i had no choice, the motor in my blender was starting to smell like it was burning-- i can't even imagine howt thick this would be with only a 1/4 cup of condensed milk), a handful of ice cubes and sweetened with stevia and a bit of french vanilla davincis.
All I can say is WOW!!!
It came out like a thick mousse/pudding (you need a spoon to eat it!). it's so rich I couldn't even eat half of it. I've put the other half in the freezer for a bit to see if it comes out ice cream-like.
I'm thinking there could be a million variations on this too..berries, different extracts like banana, coconut etc.
I think I have a new favourite recipe....
