    My sister finally talked me into trying it year before last and I love them that way, now. I just wash and dry them and freeze them whole. When you need to use them, take as many as you need from the freezer and let thaw for just a few minutes. Cut out the core and the skins will slip right off. I chop them while they are still partially frozen and put them on top of the hot foods that I am adding them to, and they stay in chunks. I still can most of my tomatoes, but I use these for dishes where I want a fresher flavor.

      Sunny...any chance at the ketchup recipe? I picked 3 big bowls of tomatoes today. BTW...I learned I hate picking tomatoes. Makes me dizzy every time I stand up.

        Hey Sunny! I second that catsup recipe request....I have a ton of yellow tomatoes and I'm gonna make some funky spaghetti sauce and (hopefully) catsup

          Yikes! Yellow catsup!

          Here goes:

          Tomato Ketchup (freezer)
          4 quarts tomatoes, peeled and chopped (about 8 pounds)
          1 stick cinnamon, broken
          1 teaspoon whole cloves
          1 teaspoon mustard seed
          1 teaspoon celery seed
          1 teaspoon whole allspice
          1 cup cider vinegar 5% acidity
          1 cup chopped onions
          1 garlic clove, minced
          1/4 teaspoon cayenne pepper
          1 cup Splenda (I used 1/4 teaspoon liquid Splenda)
          1 tablespoon salt

          Put vinegar in a small non-reactive saucepan; place cinnamon stick, cloves, mustard seed, celery seed and allspice in a spice bag or cheesecloth and place in vinegar. Bring vinegar and spices to a boil; remove from heat and let stand. Peel, core and quarter tomatoes. Combine tomatoes, onion, garlic and cayenne pepper in a large non-reactive pan. Simmer until soft. Press through a sieve or food mill. Return to pan and add sweetener to tomato pulp; bring to a boil; simmer until reduced by half. Remove spice bag from vinegar; add vinegar and salt to tomato mixture and simmer until desired consistency--30 to 45 minutes. Cool, then ladle into canning/freeze jars. Seal, label, freeze. About 5 half pints.

          That's the recipe. I actually don't like losing my tomato pulp while putting through a sieve, so I peel the tomatoes, cut in half and squeeze over the sieve to get most of the seeds and juice separated from the pulp. Then I chop up the tomatoes and put them in a blender a couple of cups at the time and pour that through the sieve. All you lose is the seeds this way. It cooks quicker this way, too.

                Hey guys, has anyone tried pumpkin leaves? A cup boiled is supposedly only 2 g carbs and both are fiber (my fitday says) Just wondering what they taste like? I got all of ONE pumpkin,; would like not to waste.......

                  Wow i didn' realize you could eat pumpkin leaves so sorry I'm not much help! i've grown pumpkin a few times and it's done well except that I didn't plant in time so the frost came and destroyed them before they could turn orange. I plant them up at my cottage which is farther north than my house and had a short season which is probably why. Next time i'll try them by starting them in pots at home.

                  Did you know you can get pumpkins to grow up a wall and on a roof? i thought that sounded pretty cool..though not sure it would be very good for the shingles (we just spent 4,000 on new ones so i think i'll be skipping that idea lol)

                    My space is running out before the veggies! My 11 cubic feet upright freezer is so full I can barely get the door closed.

                    Today, I was freezing herbs and they don't take much room. I also roasted a bunch of red and yellow peppers and cut them up and froze them.

                    I'm too tired to put up pictures, but my peppers are huge this year and the walls are about 1/4 inch thick.

                    Next year, some way, some how, I'm getting out of this apartment and I am getting back out in the country so I can have a huge garden again. Chickens, too! Maybe a milk cow. I want real cream that hasn't had all the health cooked out of it by the ultra-pasteurization. I want to make my own cheese and butter.

                        If you were my neighbor, I could share your chickens. I have been reading a book called "Keeping Chickens" all day today. I want Rhode Island Reds, Black Australorps, Speckled Sussex and Barred (Plymouth) Rocks--for starters!

                          Okay, I finally took pictures of my peppers. These are the biggest, thickest peppers I have ever grown. Completely organic.

                          I made to-die-for soup today with fresh tomatoes (beef steak and paste tomatoes), a big roasted red pepper, onions and garlic sautéed in olive oil, and lots of fresh basil and parsley. I cooked the tomatoes like I do for sauce, then put some of the tomato juice back in the blender with the rest of the stuff. Just cooked it for 10 minutes, but it was thick and delicious. I haven't had tomato soup since I started Atkins three years ago. It was a perfect day for it-- pouring down rain and cold.

                            Wow! Nice peppers! This is the first year mine did well too.

                            I tried the chicken tractors, but there are so many ruts on our property, the wheels on the thing pretty much sunk into the ground.

                              I have to tell you fellow gardeners how much I am enjoying all the produce that I put up this year! My homemade "pasta" sauce is the best I ever ate. It works great over squash noodles. I will forever more be canning and freezing my own sauces.

                              I cut up my red, yellow and green bell peppers in different sizes from long wide strips to tiny dice. I froze them so they didn't stick together and put them in zipper bags. It's so easy to just grab a bag or two and measure out how much I need for a recipe.

                              For my hot peppers, I just cut them open and took out the seeds and froze them like that. It's still easy to dice them while they are still frozen to use in recipes.

                              I'm gonna need a bigger freezer next year! My 11 cubic feet upright got full too fast!

                              I am working hard to get back out into the country by spring. My 14-year-old grandson says he will help me all summer. He has a natural green thumb. When I became disabled when he was very small, he helped me just like a big kid. He taught his mom and aunt how to plant garden when he was five years old, and I was not able to do anything.

                              I've got my seed catalogs out already, dreaming about what to order this year. I'll be ordering mostly from Johnny's this year. I've always ordered mostly from Burpee, but they have gone to over $5 for a pack of seeds and shipping doubled. They now grow most of their seeds over in India or China and they don't germinate as well and I have gotten the wrong seed three times. When you pay 5 bucks for a pack of seed, plus shipping, spend money growing them and then they are not what you ordered, it makes me furious!
